I also prep on weekends. I saute veggies and turkey and dump them in a pan, then dump egg whites on top. Bake, slice, and wrap in foil so that all i have to do is stuff one in my lunch box as i'm heading out the door. If we're going to grill, we're grilling up a whole bag of chicken and I munch on that at work all week. It's not exactly super delicious, but it is healthy. Same with brown rice--if i have extra, i freeze it in baggies. I also keep those steamer bags of veggies around for emergencies. Sometimes I just don't have time to roast up fresh broccoli, so I pop a bag of frozen broccoli in the microwave

Also ditto the "keep it simple" methodology.

I tend to just keep it simple. Salads are great lunch options. Dinner is a protein and a veg. A steak or chicken breast or piece of salmon and a bag of steamed freezer veggies is a very quick, but healthy dinner.

I do something similar to @JennyD and do some prep on Sunday nights. I prepare snacks and sandwiches for lunch (keeping the meats, bread, and veggies separate to prevent soggy sandwiches) and chop any veggies that I may need for the week.

I keep a snack tub in the fridge that I refill once or twice a week. I bag up individual portions of baby carrots, washed or chopped fruit, cheese slices, muffins, or hard boiled eggs in there and we grab for lunches or whenever we're hungry. Its super helpful when you get home and you're hungry before dinner is ready.

I also always have a batch of cooked rice or grain on hand. You can make some quick fried rice, or use it as a side dish for something.

For fast meals, I've been prepping bean and cheese burritos and chicken quesadillas for the freezer. I just assemble a batch of burritos or quesadillas, toast them on my electric griddle lightly coated with cooking spray (which seals everything in and keeps them from getting soggy), and then wrap each in foil AFTER they have cooled down (again prevents sogginess). Then I just pull one out and cook the burritos for about 2.5 minutes and the quesadillas for about 1.5 minutes in the microwave. Once you add some baby carrots or a piece of fruit, its a pretty healthy meal.

We also keep pre-rinsed/prepared salad greens in the fridge, along with a bag of shredded carrots, and a bag of croutons. If we at least have those things, we can have a very fast, if basic, side salad with our meals (especially while my burrito heats up!) or we can throw leftover meat on it to make a dinner salad.

Making a weekly meal plan helps a lot. I do lots of crock pot meals, even in the summer, since it doesn't warm up the house.

That and have a few quicky meals, like pre made indian curry sauce from trader joes- just throw in a protien and some veggies = easy one pot meal.

To combat that, I do a TON of meal prep on Sunday night. I meal plan every week, usually Thurs/Fri and grocery shop Fri/Sat. Then do meal prep on Sunday - wash fruits and veggies, chop vegetables to suit the meal planned, grate cheese, grind coffee, write a list of meat that needs defrosting and on what day (if required), make lunches for the week (mason jar salads) and chop stuff for the "snack box". It's a LOT of work in one day (like, hours), but it pays off big time during the week.

When it all falls off the rails, we usually order in. This happens about once a week.

My staple is a quick stir fry. A meat, a veggie, onion, garlic, a little soy sauce or other sauce, in a little oil 20-25 minutes tops from fridge to table. Quick and healthy.

It seems like my biggest obstacle to eating healthfully is the time it takes to prepare healthy meals. Typically I come home from work starving and want to eat the quickest thing to make in the fridge, which doesn't really mean time for chopping/prepping/baking.

What are your go-to quick fixes for healthy food?
