It turned out pretty well! I think I undercooked it but it's tasty.
@MrsRcCar: I already was replacing one of the three bananas with applesauce (only had two) so didn't want to add yet more applesauce.

@Foodnerd81: I've found that it's rarely a disaster to have more flax. I put a ridiculous amount in pancakes and they turn out great.

Well this should be interesting, since I had to make a couple of substitutions and I wasn't sure whether to do one egg worth of flax seed (according to the package it's 1 tb and 3 tb water for one egg) or two eggs worth, since it calls for 2 egg whites and I've substituted 1 whole egg for 2 whites before... Luckily it's just for me and DH, so I won't be terribly embarrassed if it's not great. :)

I've totally done it with egg white. It's fine! 2 egg whites is the equivalent of 6 TB

Flax seed meal is a good egg substitute. Do you have that on hand. I think it's two tablespoons to replace one egg. But google and confirm!

I was about to make banana bread during naptime but realized I used up all the eggs over the weekend. Suggestions on something I might have in the house that I can replace 2 egg whites with (or 1 whole egg)?

I'm trying to make this recipe and already softened the butter and cooked the cranberries. Doh.
