<description>&#60;p&#62;I like making a quick pasta with italian sausage, peppers, onions, garlic and tomatoes. It takes about ~25 minutes from start to finish. Each prep step can be done while you are doing something else--I brown the sausage while waiting for the water to boil, then chop the onion &#38;amp; garlic while the sausage is browning. I use the tri-colored frozen bell peppers from TJs to save time. I use a can of fire-roasted tomatoes. By the time the pasta is done, the sauce has cooked down nicely. I do garlic bread in the oven sometimes too. Husband loves it and it is so easy!

<description>&#60;p&#62;My MIL just made us some awesome soup I promptly remade that can be mostly made ahead and then is super fast. &#60;/p&#62;
&#60;p&#62;Baked Potato Soup&#60;/p&#62;
&#60;p&#62;3-4 large or 6-8 small baked potatoes (could be made the night before)&#60;br /&#62;
2 cups milk&#60;br /&#62;
1 cup cheese + more to garnish&#60;br /&#62;
4(+) strips bacon (could be made the night before, or is pretty quick to make)&#60;br /&#62;
green onion/chives (to garnish)&#60;/p&#62;
&#60;p&#62;Scrape out baked potatoes into a pot, add milk and cheese. Heat until hot. Add 2 strips chopped up bacon, 2 tbspn bacon grease, and salt/pepper to taste. Serve with extra cheese, the other 2 strips bacon chopped/crumbled, and green onion for garnish.&#60;/p&#62;
&#60;p&#62;Once the potato and bacon are made it basically takes 15 min to heat up.

1 can diced tomatoes&#60;br /&#62;
1 can kidney beans (or any other kind of beans you have on hand)&#60;br /&#62;
1 packet of mccormick chili seasoning&#60;/p&#62;
&#60;p&#62;Combine in a pot and let it simmer as long or as short as you want (definitely works in the crockpot, too). Sometimes I add some corn, too. We eat it with cheese and sour cream. So good!

<description>&#60;p&#62;Yeah, in your position, I'd get the super delux crockpot that will cook for so long, then switch to warm. Then I'd be using that thing 5 nights a week. &#60;/p&#62;
&#60;p&#62;Here are my crock pot go tos - &#60;/p&#62;
&#60;p&#62;Sauteed meat, onions, peppers, mushrooms (super easy to do in big batches and freeze) plus canned tomatoes, then just make pasta and a simple salad at dinner time. &#60;/p&#62;
&#60;p&#62;Taco/burrito fillings - ground beef/chicken, black beans, frozen corn, canned tomatoes, then a ton of taco seasoning. Then serve with shredded lettuce, cheese, etc. That's just about the easiest meal in the world, imho. &#60;/p&#62;
&#60;p&#62;Chicken, with potatoes, sweet potatoes, carrots, etc, cooked under it. &#60;/p&#62;
&#60;p&#62;Some kind of soup? With fresh bread. &#60;/p&#62;
&#60;p&#62;After that I'd probably go for a quiche made the night before, and then maybe grilled sandwiches with soup, stuff like that. Or a big salad with some kind of protein on top, all prepped the night before.

<description>&#60;p&#62;Can you invest in a crockpot that has a timer that you could set to come on while you are gone? They are awesome and help so much. Another idea is to spend a morning on your weekend and make up basic items (spaghetti sauce/rice/soup) and freeze and pull out as needed during the week.&#60;/p&#62;
&#60;p&#62;Some ideas:&#60;br /&#62;
- Crockpot chili and you can microwave baked potatoes to serve with them and bagged salad. I cook my chili on low for 8 hours and then it just switches to &#34;warm&#34; mode until I get home.&#60;/p&#62;
&#60;p&#62;- Crockpot BBQ chicken drumsticks. Put frozen drumsticks (without skin) and bottle of favorite BBQ sauce and spices you like and cook on low 8 hours. &#60;/p&#62;
&#60;p&#62;- Any soup you like that you make, and store in the fridge. I  eat off a pot of stew and make grilled cheese during the week. &#60;/p&#62;
&#60;p&#62;- Ravioli and steak with Ceasar salad. I pan sear and then bake my steaks, and ravioli takes 8 minutes to cook.
