We started saving time when we stopped following recipes. One meat, one veg and a simple salad. Most meals are on the table in about 25 min or less with very little hands on time. We try to make enough for a few meals at a time.
-Cook a couple roasts once a week. It's only about 5 minutes of hands on time for all the meat you can fit in the oven.
-Broil chops & steaks. 10 min per side works for us.
-Simmer chunks of chicken/fish/shrimp/etc in a pot of jarred salsa verde or curry. Cooks super fast. We do pork and beef that way too but they can be tough with short cooking time.

I do grocery shopping sat AM and usually food prep for a couple hours on Sunday. It's not so bad because it frees up a TON of time during the week. Because if i'm cutting an onion, cutting two is much easier, etc. Really!

@JennyD: yes, I've thought of doing this, but would like for us to eat together at least sometimes. I just need to plan better on weekends in general so we aren't scrambling in the evenings.

@Mrs. Sunshine: Thanks for the links!

@blackbird: I need to do this! I just hate taking up my weekend doing "not fun" stuff. It's already filled with cleaning and shopping. I hate adding food prep to the weekend to-do list. I need to just suck it up and be more organized.

@tlcbaby: Thanks! I'll look that over

Have you ever considered saving your leftovers, from the night before, for him, and just re-heating them and feeding him as soon as you get home? He would just be a day behind you in meals.

And if it's important to you that you all sit down as a family for a meal, set him up with a colouring book at the table while you and your husband eat. This has been saving us lately.

But I'm always open to quick no(low)-carb meal ideas too!!!

I get a lot of my ideas from Pinterest! I SAH but 4 to about 630 is fussy time in my house & if my hubby is working overtime it can literally take me 3 hours to make the simplest meal because LO is so grouchy! Here is where I got some ideas for the coming week

I'm a WOHM and we usually get home between 5-5:30 (sometimes later). My toddler is absolutely starving! We can hardly prepare anything for dinner because he is having a meltdown wanting to eat. I try giving him a snack (usuallyfruit and milk) to hold him over, but he isn't satisfied until he gets a full meal. It is so stressful. I need some ideas for paleo-inspired meals (we aren't strict paleo, just lean that way) that can either be done in a crockpot or mostly prepared the evening prior so it's pretty quick to the table once we get home!
