My #1 quick meal is chicken breasts dumped in the crock pot and shredded once cooked - using salsa with them, adding beans from my freezer and cheese = tacos. Using BBQ sauce with them, buns/rolls =bbq sandwiches :)

I try to do batch cooking, especially now that I'm tired & pregnant. So I'll marinate 2 bunches of chicken, stirfry, and chop and use one for that night and freeze the other. Then I can use it on a pizza or in quinoa/rice for stirfry. Same thing as with ground beef or chopped veggies :)

I'm always doing quick meals, my LO doesn't give me much time to play in the kitchen. One of our favorites is spinach, mushroom, and goat cheese pizza.

I buy the dough at the refrigerated section at the grocery store. Roll it out and sprinkle with olive oil, bake for 8 minutes at 400 degrees. Put on baby spinach, sliced tomatoes, mushrooms, goat cheese, and whatever toppings you want. Sprinkle more olive oil on and bake 15 minutes.

Another vote for crockpot meals. I also like stuffed peppers, and they are easy to make since we eat rice everyday, anyways.

I do "big salads" a lot. Really easy and fast especially if you buy the bagged lettuce. My go-to is hearts of romaine, chopped green apples, bleu cheese, candied walnuts and dried cranberries with raspberry vinaigrette. I've also made a version of the Fuji Apple Chicken Salad from Panera- greens, tomatoes, grilled chicken, walnuts, Gorgonzola, red onions, and apple chips with Fuji Apple Vinaigrette.

homemade lara bars have become my new favorite!!
It takes maybe half hour to make 2 batches of bars! It's great to have on hand for a quick afternoon snack, or even if I don't have time for breakfast. No added sugar, full of protein!

The rotisserie chickens from the grocery store are a favorite of mine for quick meals. Grab one of those, some Uncle Ben's Ready Rice (cook in the pouch for 90 seconds - genius!) and a bag of frozen veggies and you've got a quick/healthy dinner.

For snacks, I really enjoyed Tricuits and cheese, cinnamon raisin bagels with peanut butter, Dole fruit cups, yogurt with granola and blueberries. And I bought some of the Sabra hummus that comes with pretzel chips.

I do a lot of grilled chicken salads, quesadilla's, pasta's with olive oil during the week since DH is usually traveling.

Another thing is make a calzone with a roll of thin pizza crust. Spread it out, half (lengthwise) put your toppings, then hold the other half over it. Pinch it closed, cut 4 slits on the top, then cook. Super easy but yummy.

Snacks - hummus with veggies (things you don't have to cut up: sugar snap peas, baby carrots), Greek yogurt with granola, bagels with cream cheese, hard boiled eggs, frozen waffles

Meals - I ate a lot of stirfry! Just used chicken with whatever leftover veggies I had in the fridge. I also ate a lot of pasta and frozen Trader Joe's meals.

Snacks: string cheese, fruit, hummus and wheat thins, cereal, bagels and cream cheese, chips and salsa

We get fast food a lot more than usual these days when I feel the urgent need to eat and don't want to take time to cook.

Breakfast - muffin from box mix, fruit (usually grapes or berries), decaf tea, alternatives: Whole wheat english muffin with egg , cheese, ham (crack the egg in a small bowl, scramble it, pop in the microwave for 40 seconds, add to top of english muffin with ham and cheese, nuke for 15 seconds more to melt cheese) with fruit on the side.

Lunch- Panini (sandwich meat, mustard or BBQ sauce, gouda cheese, on whole wheat bread put in the panini maker), spinach salad with grape tomatoes and cukes (I slice the cuke ahead of time so during the week I don't have to mess with it)

Snacks: luna bars, more fruit (love sliced up peaches), smoothies (dump some plain greek yogurt in, some mango nectar, then assorted frozen fruit), pita chips with hummus

Dinner: Crockpot meals, or meals from Woman's Day magazine (they have them all on their website if you look up menus) they usually take less than 30 minutes to prep and cook. Or for ultimate lazy, we do breakfast for dinner with frozen whole wheat waffles and eggs.

I'm really digging frozen waffles with peanut butter -- my local grocery store makes a great flaxseed low-fat waffle that I throw in the toaster and top with PB for breakfast - but I could just as happily eat them for lunch or dinner. Another favorite is low-fat granola mixed into Chobani for lunch.

I've made a lot of pasta, pizza (homemade but still super easy, I have a no-rise dough recipe or I use storebought dough from the bakery), and tacos in my pregnancy. DH makes a quick stir fry lunch with the frozen stir fry bags and ramen noodles (no seasoning). Peanut butter and jelly, grilled cheese and soup for lunch (but I go for the healthy bread and low-sodium soup from the health food store). Luna bars, greek yogurt, apples and peanut butter, trail mix, cheese and crackers, and easy fruit -- grapes, oranges, etc. -- for snacks.

Stir fry meals are really easy, especially if you get pre cut veggies or use frozen. Pasta dishes are also the easiest, I've found--boil some noodles, sautee some veggies in olive oil and garlic, and mix them together. Or roasting chicken in a pan with veggies is an easy one dish meal. As for snacks, I like granola bars, yogurt with honey, and apples with peanut butter.

What are your favorite quick snacks or quick meals?

This pregnancy has me feeling extremely tired, so cooking a big meal requires more energy than I have. I'm having a hard time putting on weight though, so having frequent meals/snacks is important.

What are the quick and easy snacks you like, and meals that can be whipped up quickly without too much labor?
