Also if you have a Trader Joe's near you, they have lots of frozen things that you can heat up that kids will eat and have no preservatives. LO loves their chicken nuggets that are real breast meat. They also have yummy tortellini and pesto sauce and good little meatballs.

I keep those Gerber pasta pick ups in the house for times when I just need to grab something. He loves those things! Otherwise it's some kind of pasta with red sauce, scrambled eggs, or PB&J.

I also sometimes make stuff ahead of time one night and make different snacks/easy meals. His favorites are pancake muffins which you can bake different vegetables and fruit into- I love putting kale in it because he hates green vegetables normally.

Another favorite of his is peanut butter oat balls - it's peanut butter, oats, flax seed, honey, and vanilla extract - you don't need to bake them at all and they're so easy to make. I just stick them in the fridge and he has them as a snack or with meals.

-Peanut butter and "jelly" sandwich (I just use raspberries or strawberries for the jelly)

-Turkey or ham on pita bread with hummus, with fruit

-Turkey burger with sweet potato fries (I just make them myself and toss them with olive oil and pepper. Super easy!)

-Breakfast for dinner: chicken sausage, pancake or waffles, fruit

You could also do cut up fruit, cheese stick, and pita bread or some other type of grain.

We eat (almost always) after LO has gone to bed too, so we make meals just for her. I think things that I can make a batch of and give her for a few nights, like:

Soup
Chili
Pasta (plain and just toss with olive oil to keep it from sticking, then heat up and top with whatever sauce)
Cheese
Cheese sauce (have over pasta for mac and cheese or as dip for broccoli or cauliflower)
Rice
Baked chicken
Chicken salad
Quesadilla

LO also *loves* shrimp, which are quick and easy to sauté up and throw over pasta with some frozen veggies.

Dinner last night was random...Plain macaroni, leftover tri tip, steamed carrot sticks and PB and J on Hawaiian rolls.

Tortellini, grilled cheese, and quesadillas are great!

@MrsTiz: Here's a random list of things we give our 15 month old when we're having something she wouldn't eat or can't have:

-I made a batch of meatloaf in a mini muffin tin and freeze the "mini meatloaves"
-Frozen turkey meatballs (Target generic ones are pretty good)
-String cheese
-Frozen peas and carrots thawed with butter
-Canned black beans or cannellini beans
-Frozen ravioli or tortellini
-Canned soup (I just strain off the broth and give her the meats and veggies)
-Quesadillas (my kid will eat pretty much anything if it's between two tortillas with some cheese - broccoli, cauliflower, spinach, you name it)

I cook up tortellini and meatballs (no sauce) and A eats that for a few days.

A also REALLY likes grilled cheese and quesadillas so I cook those up with some mashed veggies or shredded/sliced meat inside. The veggies and meat are usually leftovers from our dinner the night before or frozen and I just heat up 1/2 a cup in the microwave before mashing.

What about quesadillas? We do that a lot when we need something quick for our 1.5 year old. I will put leftover taco meat and cheese in a tortilla and fry it on the stove in a little butter.

LO has an early bedtime so that means he has to eat dinner early. We get home from work at 4:15ish and then I usually feed him dinner around 4:30. DH and I don't eat until after he's in bed, so that's out..

I'm struggling to find stuff that I can feed him for dinner. Mainly finding things that are quick to throw together or heat up well. I've found that probably half of the dinners DH and I eat aren't all that great for heating up the next day, and I'm really struggling with feeding him nutritious foods. My fall back is 2 fruit cups and some Cheerios.

Halp!
