<description>&#60;p&#62;If you're able to swing ~$10/month, I subscribe to a recipe service called CookSmarts that has completely transformed how I cook. My husband is a lifelong vegetarian and I was really struggling with finding diversity in vegetarian recipes, especially because he's a fairly picky eater. CookSmarts sends me 4 recipes every week with vegetarian modifications, step by step instructions, etc. Thanks to them, I learned to cook tofu effectively, spice combos that make vegetables pop, flavor combinations, all kinds of tricks. It's been the best investment I've ever made!

<description>&#60;p&#62;@gotkimchi:  Yotam Ottolenghi writes great veg forward cookbooks. His book Simple has lots of really good quick, easy recipes. Plenty and Plenty More are also fantastic, but generally not weeknight recipes. &#60;/p&#62;
&#60;p&#62;We eat so many veg tacos. Sautéed poblano pepper &#38;amp; mushroom w/greens and melty cheddar are a favorite (originally a recipe from Rick Bayless’s Mexican Everday, but now more our own) and black/pinto bean tacos with greens, good salsa and fresh tomato and onion are the easiest weeknight meal.&#60;/p&#62;
&#60;p&#62;If your kids will eat Indian food we also love Madhur Jaffrey’s Vegetarian India. The ingredient lists can be long, but the recipes come together surprisingly quickly and are universally delicious.
