What I found out was that when you cook alcohol, the alcohol content becomes LOWER but it does not completely disappear. The only time alcohol truly cooks off is when there is no liquid left, so like if you used wine in a marinade and then grilled the meat, the liquid is gone so the alcohol is gone. But as long as there is still liquid there IS still alcohol. The amount depends on how long/hot you cook it, what it is in, etc. But it seemed that for something liquid-y that you add it to and then cook for 30 min or so, the alcohol content would still be roughly 40-80% of the original alcohol content. </p> <p>I opted not to use the tequila because I wasn't comfortable with it, but I think depending on how comfortable you are with consuming SOME small amount of alcohol and how much the recipe calls for-- you may be okay?
