<description>&#60;p&#62;I like caprese salads/sandwiches in the summer. I mentioned on a thread yesterday that we also like doing mushroom/spinach quesadillas with corn/black bean/avocado salad. I also like to make grain salads (one with Israeli couscous, arugula, dried cherries and gouda is a fave). In the winter, I like to freeze chili and stews in lunch portions. We also do brunch sometimes - frittatas or egg/cheese sandwiches. I'm realizing from this list that we don't do much meat for lunch, I guess...

<description>&#60;p&#62;Smoothies can be made nutritionally dense with yogurt, nut butters, and/or coconut oil (can't taste it) plus greens if you keep frozen fruit in the freezer.  Make one of those and you can give them whatever carb they want.&#60;/p&#62;
&#60;p&#62;Little bites of rice wrapped in nori with scrambled egg on the side.  Fruit and carrot sticks.&#60;/p&#62;
&#60;p&#62;Breakfast for lunch (pancakes, eggs, etc).&#60;/p&#62;
&#60;p&#62;Kiddie sushi (roll tortillas up with something sticky like hummus, cream cheese, or peanut butter and some kind of filling like meat, cheese, veggies, a banana, apple slices, raisins, etc).  Slice up and serve!

<description>&#60;p&#62;Lately I've been having kale smoothies. I make a 50/50 blend of kale and whatever fruit I have lying around, some Pom juice, Greek yogurt if I'm extra hungry and blend it all up. So good and filling. LO loves it too. &#60;/p&#62;
&#60;p&#62;We also eat sandwiches - sun butter and jelly for LO, turkey avocado for me. Sometimes rotisserie chicken with steamed veggies. Usually though it's just whatever randomness I scrounge up In the fridge.
