I gotta add spinach next time- I LOVE adding it to pasta. DH works at a well-known restaurant that is reopening today actually and his station right now includes risotto. Right now it's a creamy tomato risotto and at the media event last night apparently people were coming back for fourths! I asked him to make it for Thanksgiving when his family is here and he was like "it will be out of season then." I loosely follow the container instructions. One tbsp butter and a little evoo. Saute about 1/2 cup chopped onions till translucent. Add one cup of risotto, saute for about 2 minutes. Add a good cup of liquid, I like to turn the flame down to medium at this point. Constantly stir.the rice around but be sure to redistribute the risotto evenly. Continue doing so until most of the liquid is gone. Keep adding liquid about 1/4 cup at atime. Repeat until risotto is done (it will start being sticky) . Making sure all the liquid is gone before you add more. I added spinach at the end and some parm would be delish!<br /> The key is to monitor and stir a lot.
