I posted a similar request awhile back and @andrea recommended this vegan cake and it was really good! https://www.epicurious.com/recipes/food/views/wacky-chocolate-cake-106041

This is a generic vegan chocolate cake that is very simple and very good:

https://food52.com/recipes/24484-margaret-fox-s-amazon-chocolate-cake

Also, this banana bread is always a hit with my kids and I have used coconut oil or palm shortening in place of the butter plenty of times. I personally cut the sugar back to about 1 cup and add 1 tsp of cinnamon to the recipe.

http://www.geniuskitchen.com/recipe/best-banana-bread-2886

While we most often eat it plain, the banana bread is particularly good with for a "cake" like treat if you add in 1/2 cup of Enjoy Life mini chocolate chips into the batter. We just did this for a big group dessert this weekend - I just took the recipe and poured it into a 9x13 pan and baked it like a cake. We put cream cheese frosting on it, but if I was sending this to daycare (actually I AM going to be doing this in 2 weeks for DS2's birthday), I would just go with the mini chocolate chips and be done with it. Or you could bake it into mini muffins.

@mrsbookworm: I’m dairy free because of a nursing baby’s dairy allergy. Most cake mix and cans of frosting are dairy free! As are most boxed brownie mixes. The completed brownies aren’t vegan because you would need eggs, but they are dairy free.

You all have great ideas! Apparently marshmallows are not vegan (I had no idea) so Rice Krispie treats are out. 😦

@pumuckl: Is orange lemonade a premade drink or do you make it? Asking because I’m in Belgium and don’t think I’ve seen that here.

I just spoke with a bakery and they quoted 70 euros for 20 vegan cupcakes, so I think I’m going to try @looch’s wacky cake recipe!

I use olive oil in place of butter for rice krispie treats. My kids are allergic to milk. For classrooms that require store bought, I have brought in popsicles, which are a big hit for little ones. I like the Outshine popsicle sticks (smaller than the bars). You can also bring in cookies. Enjoy Life cookies are free of the top 8.

@mrsbookworm: subbing out butter is easy. Just use Earth Balance. It works really well for baking and you can find it in almost any store. Or substitute oil for butter in brownies.

Thanks for all your ideas! I can’t do Rice Krispie treats as butter is not allowed.

@fannymae: It does have to be food. That sounds cute though!

@looch: I’ve never heard of wacky cake, but I think I’ll do a test batch!

@elbiekay: I’m going to start looking up muffin recipes now! My usual go tos have either milk or sour cream or butter.

Rice Krispie treats are a big hit for us. Could you make brownies and still use eggs? In my experience that seems to be the most missed ingredient in a baked good, and the dairy parts can be substituted (so you could start with your favorite brownie recipe, and use dairy-free chocolate chips if callled for, coconut or soy milk, and a dairy-alternative butter OR a recipe that only uses oil), or you could get a boxed brownie mix that’s dairy free. Because my favorite brownie recipe is so chocolatey, I’ve been able to adapt it when I don’t have the right ingredients (various flours, replaced an egg with yogurt, so I’m guessing you might be able to do a non-dairy butter) : https://smittenkitchen.com/2010/01/best-cocoa-brownies/
If it were me I’d avoid all the testing and go with Rice Krispies though—so quick!

DS has a birthday coming up and I need to bring a treat to school. In the past, I’ve done fruit kebabs, but he’s asked for something baked. The tricky part is, about 1/2 of his class does not eat any cow products. Any ideas? My one attempt at vegan brownies did not go well.
