I make pizza pinwheels and breakfast casserole mini muffins every so often and freeze them. Then I nuke and just send it off and he eats it at room temp.

I nuke frozen meatballs, chicken nuggets, and sausages (hotdog, chicken apple, brats, turkey breakfast, etc). I also make a veggie omelet and cut into bite size pieces. For those proteins I usually pair with multigrain rice from our rice cooker and throw in a ketchup packet.

I do lots of all in one meals in the food jar. Risotto. Leftover pasta or Mac n cheese with grated or chopped veggies like spinach or broccoli or zucchini. Fried rice with eggs and whatever leftover meat and veggies laying around. Japanese curry and rice.

Raw carrots are basically the only fresh veg DS does so I send some baby carrots so I try to add lots of veggies to his main entrees. I do all sorts of fruit in season or a pouch. Today he had a clementine, yesterday Asian pear and pomegranate seeds. Sometimes he gets a small treat like 2-3 mini Oreos or a few yogurt raisins. Milk in the thermos.

My list looks almost exactly like yours, minus the tacos/pizza. I also rotate in sunbutter
and jelly as a sandwich type, and switch out crackers, wraps, bagels, English muffins, mini bagels or rice cakes as the "bread" to add more variety. The only other real side/snack we do that you haven't listed is dried fruit, but I imagine if you have pretty strict rules, they might say it's too sugary!

DD1 won't eat the school hot lunch that is provided, or any hot food that I send...so I've settled on serving whatever she'll eat that covers all the nutritional bases.

We can do sunbutter, so I'll do some sort of sunbutter/jelly or sunbutter/banana combo for sandwiches. I also found that the girls really like different breads -- mini bagels, english muffins, etc. Which make it seem kinda different but still basically the same :)

On Fridays I pack them each 3 of the Annie's bagel bite pizzas in a thermos. A treat for them and easy peasy for me by the end of the week!

They love when I pack pancakes or french toast cut up with fruit and syrup in their thermos. Or at least it always comes home empty!

I've also done rice w/ soy sauce & shelled edamame. They'll actually do the edamame room temp.

I don't have to pack a lunch but some of DD's favorites would pack well.

Chicken sausage, cut up. She has no problem eating it cold
Mini meatballs
Hard boiled eggs
Quesadillas - again she doesn't mind them cold
Pasta salad with ham and veggies
Mini muffins - I typically make banana or blueberry

We started with variety, but are finding she eats much better with the same thing! Not as "fun", but does make things easy and predictable for DD.

Oh how I wish we could pack PB and J!

I find that K doesn't really care about variety; if she likes it, she can eat it often.
