<description>&#60;p&#62;Tonight I made pumpkin bratwurst with onions and pierogis. &#60;/p&#62;
&#60;p&#62;Chopped 2 onions and sautéed till brown, at the same time I started simmering the brats (probably 15 min sautéing and simmering.) then I took out the brats and added a box of frozen pierogis to the onions, let them start to work while I sliced the brats. Then I mixed some cider vinegar honey and grainy mustard, flipped the pierogi, added the brats and let them heat back up. Then I added the honey mustard sauce and let it reduce a bit. It was really good and minimal prep!

<description>&#60;p&#62;I do a shredded soft taco thing that's so easy. &#60;/p&#62;
&#60;p&#62;Plop of butter in bottom of crock put. Thinly sliced onion on top of that. Another plop of butter. Thinly sliced green pepper on top of that. However many chicken breast on top of that. Then some salsa and taco seasoning (I make my own). Cook on low for 6 hours. Shred and serve on soft taco shells with cheese and sour cream and whatever else! So easy and good.

<description>&#60;p&#62;Ditto the pulled pork that @looch: suggested!  I usually trim the fat off pork butt/shoulder then put it in the crockpot on low with enough Dr. Pepper/Root Beer/or Coke to cover the whole thing.&#60;/p&#62;
&#60;p&#62;Strain it so no more liquid, then dump BBQ sauce and mix.  So delicious!  Love it as tacos or scooped into Hawaiian bread.  Also great over rice.&#60;/p&#62;
&#60;p&#62;Two other super easy recipes I like are: wasabi mayo salmon that I posted on the blog, and another oven recipe called Cranberry Russian Chicken.  Both require less than 5 ingredients.  Easy!

<description>&#60;p&#62;@cheert16:  I used two recipes as inspiration but kinda made up the recipe for the ribs &#38;amp; kraut. I had a 4lb rack of St Louis Ribs in the freezer (most recipes ask for 1-3lbs), then I had some leftover sauerkraut about 16oz. I had made apple chutney the night before so I added 1-1/2 cups of that for the liquid in lieu of 1 cup of liquid most recipes called for. I thought apple juice or cider would be good alternatives! Then I diced 2 apples. Most recipes asked for 1 or 3. I figured since I had the apple chutney, two apples would suffice. Then 3 garlic cloves minced, s+p on the ribs, and one onion diced.&#60;/p&#62;
&#60;p&#62;I combined everything in a bowl then dumped it over the ribs in the crock pot and cook for 8-10 hours. Most recipes said sauerkraut and apples on bottom and ribs on top. But I thought it made more sense to put the wet ingredients on top so the flavors seep down and keeps the ribs moist.&#60;/p&#62;
&#60;p&#62;I haven't found a chicken, butternut squash &#38;amp; apple recipe I love yet. When I do I'll share it!&#60;/p&#62;

&#60;p&#62;Today I left chicken soup in the crockpot- I just threw in the broth (I made it over the weekend) added raw veggies and chicken and when LO and DH get home from work/daycare- dinner is done! Chili is a big one for us, pastas in the crockpot are usually pretty good (I add ground turkey or beef), pulled pork, I have a bunch of recipes at home!

&#60;p&#62;I do like pulled pork, so I like to do a pork shoulder/butt in the crockpot.&#60;/p&#62;
&#60;p&#62;You might have some luck googling &#34;dump chicken.&#34; Once you get over the name, you might find some inspiring combinations to change up chicken or pork.

I do ground beef sauteed with onion and 1/2 spice packet - the McCormick's chili mix usually -  then dump it in the crockpot with 2 cans of kidney beans, 2 cans of white beans (all drained of liquid), 1/2 jar of pace salsa, 1 jar of my favorite pasta sauce, other half of spice packet, stir and let cook on low for 6 hours. Serve with shredded cheese and bagged salad on the side.

<description>&#60;p&#62;I'm a interim SAHM until I find a job. With a NB and toddler my prep time is minimal for dinner. So, what are you favorite set it and forget it meals? ie Meals that require minimal prep and attention from you while cooking? Either in the oven or crockpot or other method.&#60;/p&#62;
&#60;p&#62;We're meat eaters in this family so total veg meals won't fly. I prefer all our meals to have a protein and veg.&#60;/p&#62;
&#60;p&#62;For example tonight I'm making ribs &#38;amp; kraut with apples in the crock pot. Will probably steam some broccoli on the side as well.&#60;/p&#62;
&#60;p&#62;On friday I'm making a chicken drumstick with butternut squash &#38;amp; apples in the crockpot. (Can you tell we went apple picking?  :silly: ) On the docket for next week is a chicken, quinoa &#38;amp; broccoli casserole.
