<description>&#60;p&#62;Our favorite way to eat chicken breast is baked in ken's light ceasar dressing. It's an oil based salad dressing, not a creamy one. I put 3 boneless, skinless breasts in a 8x8 glass pan. Then I squirt dressing on them all enough to cover + a little more. Cook in a preheated 350 over for about 40 minutes. I swear the flavor from the dressing goes all the way through the chicken without marinating!

<description>&#60;p&#62;We eat &#34;chicken under a brick&#34; a lot. You can make it with a whole chicken, or chicken breast. If you use only the breast, you need the bone-in kind, works much better than without the bone. &#60;/p&#62;
&#60;p&#62;Also, chicken and spinach tacos. Cook chicken breast, shred it and mix with tomatillo salsa - in a pan over medium low heat (easy to make or avail in the ethnic aisle of most grocery stores). Add in 1 bunch of fresh baby spinach (fresh is a billion times better tasting than frozen!), and just let it wilt into salsa. Warm corn tortillas, top with chicken/salsa/spinach mixture. Top with cool crema if you can find it, if not, sour cream or plain Greek yogurt with a little lemon juice works great.

&#60;p&#62;We usually boil potatoes and steam broccoli stove top as this cooks, easy, healthy dins!

<description>&#60;p&#62;I prefer chicken thighs to chicken breast, but white meat is so much less fatty and healthy that I try to use that once in a while, but I SUCK at cooking chicken breast.  It always ends up tasting like cardboard!  What am I doing wrong?  Does it need to be marinated?  Tenderized?  Background info: the only way I've tried cooking it is the same way I cook just about everything else stir fry with some sort of veggie and  some soy/oyster sauce or Mr Yoshida, which is soy based.  I'm totally open to trying to do anything with these darn chicken breast though.
