@MrsRcCar: okay! Here's my favorite recipe! Hope somebody enjoys it as much as I do  I do adjust a few things in the chili. For example, I don't do the sweet potato, Tapioca or beer. I add chopped celery and often just use chicken breast rather than what the recipe calls for. It's a recipe you can plays with and its always the bomb!!!!

http://www.foodnetwork.com/recipes/food-network-kitchens/slow-cooker-chicken-chili-recipe2.html#!

Love all these recipes. All I crave is chili right now. I am embarrassed to say we have gone through the Wendy's drive thru more then we should. 🙈

Redstone Grill restaurant makes the freakin BEST chili, and a few years ago I stumbled across the recipe online. Making it this week, in fact! Was gonna put the link in here, but they've restricted access! So here it is...

INGREDIENTS

1 1/4 pounds ground beef, 80/20
1/4 cup extra virgin olive oil
1 tablespoon fresh garlic, minced
1/2 cup celery, 1/4 inch diced
1 cup onions, 1/4 inch diced
1/2 cup green peppers, seeded, 1/4 inch diced
1 tablespoon chipotle pepper puree
1 cup water
1 tablespoon beef base
1 1/4 teaspoon dry oregano leaves
1 1/2 tablespoon ground cumin
1 1/2 tablespoon chili powder
1 1/2 teaspoon paprika
1 1/2 teaspoon ground black pepper
1 1/4 teaspoon ground cayenne pepper
1 bay leaf
2 cups diced tomatoes, canned or fresh Roma tomatoes
1/2 cup tomato juice
4 cups tomato puree
1 cup chili sauce
2 cups kidney beans, rinsed and drained well

INSTRUCTIONS

In a saucepan or large skillet, brown the ground beef and drain the beef in a colander to remove the rendered fat. In a 1 gallon pot, over medium high heat/flame, heat the olive oil then sauté the garlic, celery, onions & green peppers until tender. Add the chipotle puree, water, beef base, dry oregano, ground cumin, chili powder, paprika, black pepper, cayenne pepper and bay leaf, bring to a simmer and cook for 5 minutes. Then add the cooked ground beef, diced tomatoes, tomato juice, tomato puree, chili sauce and kidney beans, bring to simmer and cook 30 minutes. Stir every 5 minutes to prevent beans from scorching the bottom of the pan. Season to taste with kosher salt and ground pepper.

It's my own recipe but it's delicious and so easy! Basically just dumping cans.

1 lb of ground turkey or beef
1 can fire roasted tomatoes
1 can tomato sauce
1 can red beans
1 can great northern beans
1/2 a chopped white union
Fresh chopped garlic
1 packet of chili seasoning
Chili powder
Cayenne pepper to your taste
1 tbsp of brown sugar (or more for your taste)

Brown meat in olive oil with chopped onion and garlic. Season with salt, pepper, and chili powder. Cook until meat is cooked throughly and onions start to turn translucent.

Add all canned ingredients, chili packet, and cayenne pepper to your liking. Let simmer for however much time you have. Add in brown sugar during the last 5-10 minutes before serving.

Top with sour cream and cheddar. Serve with Trader Joe's cornbread mix!
