<description>&#60;p&#62;It seems to be hotter-than-hot everywhere right now and I was inspired by @Mrs. Cowgirl's post with her delicious avocado salad to put out a call for everyone's favorite no-cook recipe!&#60;/p&#62;
&#60;p&#62;Mine is what I lovingly refer to as 'Happy Salad':&#60;br /&#62;
mixed spring greens&#60;br /&#62;
thinly sliced granny smith apples&#60;br /&#62;
slivered almonds&#60;br /&#62;
goat cheese&#60;br /&#62;
chickpeas or white beans&#60;br /&#62;
pickled beets (or if you want to cook a bit you can do roasted beets, or leave them out if you're not a fan)&#60;br /&#62;
chow-mein noodles&#60;br /&#62;
sweet balsamic vinagrette&#60;/p&#62;
&#60;p&#62;Layer salad greens and toppings, crumble goat cheese over top and enjoy with crunchy chow mein noodles and vinagrette to-taste!
