<description>&#60;p&#62;&#60;b&#62;Chicken Tinola&#60;/b&#62; It's a simple soup with delicate flavors made of ginger and green papaya. I love the way my grandma makes it. Although it's easy to make, green papaya and chili leaves are a little hard to acquire here. You can always skip the chili leaves, but I think it really brings out the flavor.&#60;/p&#62;
&#60;p&#62;&#60;u&#62;Ingredients&#60;/u&#62;:&#60;br /&#62;
chicken (chopped whatever way you like)&#60;br /&#62;
chopped onion&#60;br /&#62;
minced garlic&#60;br /&#62;
fresh ginger cut into slithers&#60;br /&#62;
green papaya cut into bite sized pieces&#60;br /&#62;
fish sauce&#60;br /&#62;
chili leaves (leaves of any organic pepper)&#60;/p&#62;
&#60;p&#62;1. Saute the onion in a little oil&#60;br /&#62;
2. Add the garlic when the onion is transparent. Taking care to stir so that the onion and garlic don't get any color.&#60;br /&#62;
3. Add the ginger pieces (can be roughly cut slithers or pieces). Stir.&#60;br /&#62;
4. Add the washed chicken pieces. Stir in the mixture until the outside is no longer pink.&#60;br /&#62;
5. Add water just enough to cover the chicken.&#60;br /&#62;
6. Add a little bit of fish sauce.&#60;br /&#62;
7. Cover and simmer until the chicken is cooked to your liking.&#60;br /&#62;
8. Add the green papaya wedges or bite sized pieces.&#60;br /&#62;
9. Cover again and simmer for another 5 or 10 minutes or until the papaya gets soft.&#60;br /&#62;
10. Taste. Add salt or more fish sauce or both.&#60;br /&#62;
11. Turn off the heat and add the chili leaves. Stir.&#60;br /&#62;
12. Cover and let sit for a few minutes.&#60;/p&#62;
&#60;p&#62;Serve with rice.

&#60;p&#62;I love to make potato leek soup.  I have a fairly imprecise model, which I vary according to how I'm feeling.  But here's the basic gist:&#60;/p&#62;
&#60;p&#62;*Slice the white/light green parts of a bunch of leeks (2 large/3 small) and let them soak in water to get the dirt out.  &#60;/p&#62;
&#60;p&#62;*While the leeks soak, cube about 6 medium potatoes and boil them in salted water.  Let them cook until they are fork tender, or maybe a bit beyond.&#60;/p&#62;
&#60;p&#62;*While the potatoes cook, rinse and drain the leeks.  Saute them in butter with salt, white pepper, thyme, a bay leaf, and a sprinkle of nutmeg for about 10 minutes.  Sometimes, I will add chives in here as well.&#60;/p&#62;
&#60;p&#62;*When the potatoes are done, reserve 2 cups of cooking water, and drain.  Keep warm until leeks are soft.  Sometimes, I don't drain them, but will just let them sit in the water for a while.&#60;/p&#62;
&#60;p&#62;*When the leeks are soft, add 2 cups of chicken broth to the pot and bring to a simmer.  Adjust the seasoning to taste.&#60;/p&#62;
&#60;p&#62;*Add the potatoes, and, if it needs more liquid, some of the potato liquid.  Bring to a simmer, and adjust the seasoning.&#60;/p&#62;
&#60;p&#62;*Remove the bay leaf.  Using an immersion blender (or a regular blender in small batches), puree the soup.  Adjust the seasoning, if need be.  If it needs more liquid, sometimes I will add milk at this point, but not usually.&#60;/p&#62;
&#60;p&#62;Serve topped with creme fraiche and cheddar cheese.  ENJOY!

&#60;p&#62;Here's an old favorite of mine (I guess it's a classic weight watchers recipe)...it is sooooo yummy!&#60;/p&#62;
&#60;p&#62;Taco Soup&#60;/p&#62;
&#60;p&#62;Makes (12) 1 cup servings&#60;/p&#62;
&#60;p&#62;Ingredients:&#60;/p&#62;
&#60;p&#62;1 lb. ground turkey (or lean ground beef )&#60;br /&#62;
1 large onion, chopped&#60;br /&#62;
1 pkg. Hidden Valley ranch dressing mix (dry)&#60;br /&#62;
1 pkg. Taco Seasoning mix&#60;br /&#62;
1 can Pinto Beans&#60;br /&#62;
1 can Chile Hot Beans&#60;br /&#62;
1 can whole kernel corn&#60;br /&#62;
1 can stewed tomatoes (Mexican flavor like Rotel)&#60;br /&#62;
1 can stewed tomatoes (any flavor)&#60;/p&#62;
&#60;p&#62;Brown meat and onions, drain.  Mix Hidden Valley Ranch dressing mix and taco seasoning mix into meat.  Then, without draining, add all of the other ingredients.  Simmer 1 hour.&#60;br /&#62;
This is delicious served with tortilla chips, cheese, sour cream, avacados, etc
