@Mrs. Jump Rope: it's hard to eat healthy when you're on a budget, isn't it? Big sigh...

@septca: my husband is the same way. Broccoli is a no go - it's so sad because it is my absolute favorite and I want everyone to love it as much as I do.

Almost any roasted veggie tastes amazing to me! Cauliflower and brussel sprouts are my favorites to roast you can just pan fry as well to get a similar flavor. I usually just drizzle with a little olive oil and add whatever seasonings I have handy.

@septca: DH stated awhile ago that broccoli is "acceptable." How am I suppose to teach my kids to eat a variety of food when their dad is setting such a poor example? Ugh :-(

@BunnyDragon: this roasted cauliflower is amazing and will change your life bc it's sooo easy and tastes sooo good. I usually can't stand cauliflower but when you roast it it ends up almost tasting like roasted potatoes.... It is so freaking good. Everyone asks me for the recipe and are shocked when I tell them it's just olive oil and salt...the roasting brings out all the flavor. It's so good and my LO loves it.

@BunnyDragon: The olive oil and garlic get mixed with the veggies, and mixed with the pasta! It's a light sauce with lots of flavor!

Sometimes I buy frozen veggies; I steam them in the microwave and add them to my oil & garlic, then sautee a bit until it's nicely coated and flavorful. Fresh veggies are my fave, but they're so expensive right now!

@lovehoneybee: I love asparagus, but my DH won't even touch it. He says it smells like fart - can you say "OMG!!" That orzo dish sounds amazing because I love all the veggies you listed.

@septca: your DH eats like mine except for the asparagus. I completely forgot about stir fry. It's how I got him to start eating bell peppers.

My husband eats exactly these green vegetables:
salads of all types
asparagus (which he loves and we eat at least twice a week)
baby bok choy
green beans (if he has to)
snow or sugar snap peas, but normal regular peas (?)

I think stir fry might be your best bet - all the flavors mingle together and take on the flavor of your sauce. The vegetables all stay crisp, too. If that sounds like it might work, let me know and I will post my fabulous, one-size-fits all recipe.

My favorite vegetable side is roasted asparagus. Drizzle with a little bit of olive oil, sprinkle with salt and freshly ground pepper and pop into a 400 degree oven for 10-12 minutes. Sometimes I'll make a quick sauce to drizzle over it.

Melt 2 tbsps of butter in a small skillet over medium heat; cook 3 minutes or until lightly browned, shaking pan occasionally. Remove from heat; stir in 2 tsps of soy sauce and 1 tsp of balsamic vinegar. Drizzle over asparagus, tossing well to coat.

I also have a recipe for a baked orzo dish that includes mozz cheese, tomatoes, eggplant, zucchini, mushrooms, onions and whatever else I have on hand. I'll look up it up if you think that's something he might eat.

I make a garlic veggie pasta that everyone inhales

- cook pasta normally
- sautée extra virgin olive oil with minced garlic
- add fresh carrots, broccoli and cauliflower & sautée in garlic and oil until soft
- mix together

Also a cheesy broccoli side dish:
- in a large Pyrex dish, combine cheese (my mom uses velveeta), frozen brocoli and cauliflower, one can mushroom soup, one stick softened butter & rice (she sprinkles it on so I don't even have a measurement!!)
- bake 350 for 30-40 minutes

I want my family to eat more vegetables and I need some ideas. My DH is extremely picky with vegetables. I swear, he probably has tried 10 or less different kinds of vegetables in his entire life. I cooked some carrots last night and he ate it, but! It was sautéed with butter and not healthy at all. I cannot sneak ingredients into his food. I did that once and he was infuriated. He likes crunchy texture. Any suggestions?! Thanks in advance.
