My go to is super simple, healthy and delicious. Thaw a chicken breast and cut into small cubes. Saute until done. Remove from pan. Then saute any veggies you have on hand, fresh or raw. I use a combo of mushrooms, artichokes, green beans, spinach, zucchini, yellow squash, broccoli, cauliflower. Seriously, whatever you have on hand. I usually have frozen versions of the above from TJ's. Saute until done and add the chicken back. Season with salt/pepper/red pepper flake/garlic and whatever seasonings you have. In the summer we have fresh basil, thyme, rosemary and sage. Otherwise I'll use dried basil/oregano. I used to add a cream of mushroom soup to this for a sauce but have tried to get away from more processed foods. I serve over pasta, quinoa, rice or on its own with a generous sprinkle of parmesan (my hugest vice!). This is truly a clean out the fridge/freezer meal!

@Mrsdaredevil: yummm!!! sounds delish.

My go to that I make every week is stir fry over sauteed cabbage. I usually throw together zucchini, colored peppers, carrots and mushrooms. To make a "sauce" I throw together toasted sesame oil, amino acids, worcestershire sauce and red wine vinegar - salt and pepper. It's delicious!!

I make panini's on nights we need something quick...

Ham, turkey, mozzarella, roasted red pepper and basil with a little evoo on the outside of a soft cibata roll. Sometimes I add chili infused olive oil to give it a little kick.

Another go to is creamy pesto, pasta and garlic chicken. I dip chicken into melted butter with garlic then dip it into an oregano, pepper, bread crumbs, cheddar and parm mix then cook at 350 for 30 minutes.

I make chicken taco soup. It seriously is so flipping easy cuz I just throw a bunch of stuff in a pot. And I totally switch it up based on what I have at the time. And it is pretty healthy!!!

first a boil a pound of chicken breasts and then shred them.
then, I put the following into a big pot:
the shredded chicken
One can tomato sauce
One can fire roasted tomatoes
one can black beans
one can sweet corn
small can of green chills
one packet of taco seasoning

Let simmer for a bit, then serve with tortilla chips, sour cream, shredded cheese and avocado!

I don't use any recipes for anything but my go-to dishes are
burritos, huevos rancheros, waffles, tacos, a dish kind of like chicken pot pie except with tater tots or potatoes instead of the biscuit topping, meatloaf, Swedish meatballs, meatballs in red sauce, stir fry with rice....
everything comes with sauteed veggies unless the veggies are baked in.

For our chili we use 2-3 types of beans (usually canned), corn, olives, fresh green or red or yellow (sweet) peppers, some jalapeno, some tomatoes, with spices--often we add cinnamon. :)
add the separately cooked beef and onions (no onions while I'm BFing--sad!) that have been sauteed with oregano, chili pepper, salt, pepper, and secret spices (YES spice the meat and the veggies and then add them together--so yummy!)
serve with chives!

My favorite crock pot dish is pulled pork. I put a pork loin and 20oz root beer in the crock lot and cook on low 6 hours. Take the pork out, dump the soda, then return to crock and pull the pork apart. add a bottle of your fave BBQ sauce and put on low for 30 mins.

My other favorite recipe is a buffalo chicken calzone. I use frozen pizza dough from the store. I cut up chicken breast and cook it in a pan on the stove with a bit of evoo. I toss that in Frank's buffalo sauce. I roll out the thawed dough, spread out the chicken, top with a drizzle of ranch and add some cheese. Then I close the dough around it and bake until golden.

I just started making a ranch dressing chicken. I cook the chicken breasts in a tiny bit of water with any spices and I feel like and then once it almost cooked I smother it in ranch dressing and put it in the oven. So moist and so delicious!
Then I make a garden salad to go with with and stuff it all inside pita bread

Easiest dinner ever (I always make it post call): Italian dressing chicken. You can do it one of two ways. 1) Cut up chicken braise in fry pan until almost cooked. Add Italian dressing and cook til caramelized. Serve over pasta or rice. When we're really fancy we throw in some artichoke hearts or sundried tomatoes.
2) throw chicken pieces in the oven covered in Italian dressing. Cook until chicken is done and skin is brown and crispy. Serve with broccoli or another veggie.

Super easy!

I just started making this pizza, very easy and yummy.

I use refrigerated pizza dough from the grocery store. Roll it out, sprinkle olive oil on it and bake at 400 degrees for 8 minutes. Top with baby spinach mixed with a little olive oil, sliced tomatoes, mushrooms, crumbled goat cheese, whatever else you want on there. Bake another 15 minutes.

Our quick go-to are basically: meat + veggie + salad. Grill, broil or pan sear fish, pork chop, steak or chicken. Grill, or quickly pan cook some sort of fresh veggie in olive oil. Salad - sometimes we have olives/feta/cucumber/red onion, otherwise add in some combination of: avocado, goat cheese, nuts, fruit, etc. Simple balsamic or lemon juice dressing. Always takes less than 30 min to make.

This is my current go to when I don't have much in the fridge.

Fresh rosemary
Fresh thyme
Garlic (minced)
Salt
Sugar (sometimes I use brown)
Olive oil
chicken, pork or fish

Don't have measurements because I just measure by eye. Pretty generous with the herb and garlic amounts.

mix everything together except for the protein to make like a paste. Spread it all over the chicken/pork/fish. Depending on how much time I have, I may let it sit for an hour in the fridge. Then bake in the oven around 325 degrees until done.

Chicken & Dumplings in the Crock Pot:

-3 or 4 chicken breasts
-2 Cups milk
-2 cans condensed cream of chix soup
-1 bag frozen veggies (i use a peas, carrots, onion mix)
-1 container grands rolls raw (cut each roll into quarters)

Mix the milk and soup together until combined. Add the breasts and cook at medium/low for 6-8 hours (start trying to shred the chicken around 4 hours). 1 hour before serving add the frozen veggies. 30 minutes before serving add the rolls - they cook up and make the fluffy dumplings!

I usually serve with something light, like salad!

I guess my go-to would be chicken puttanesca. I don't really use a recipe at this point, so any measurements I have here are guesstimated and/or from memory. This is my favorite meal and it's super easy. I usually serve it with brown rice and a salad.

2 chicken breasts, cut in half
salt, pepper, garlic powder, oregano to taste
1/4 tsp. red pepper flakes
1 1/2 c grape tomatoes
3/4 c kalamata olives
1 Tbsp capers
mozzarella cheese

Preheat oven to 425. Season the chicken with salt, pepper, garlic, and oregano. Add olive oil to a large, oven-proof pan. Once heated, add the chicken and cook for 3-4 minutes. Flip chicken and add red pepper flakes, olives, tomatoes, and capers. I usually add a bit of caper juice, too, for added flavor. Place into the oven and cook for about 15 minutes. Top each piece of chicken with mozzarella and cook until melted.

I need some new quick and easy recipes. My current favorite is one my Aunt gave me. It's not very healthy, but it sure tastes good and is a great make-ahead dish.

Creamy Poppy Seed Chicken:

1 can cream of mushroom soup
1 can cream of chicken soup
1 can cream of chicken mushroom soup
1 tbsp poppy seeds
1.5 lbs of chicken, cooked and cut into bite-sized pieces
1 sleeve of Ritz crackers, crushed
4 tbsp butter, melted
Yellow rice, prepared

Heat oven to 350. Mix soups, chicken and poppy seeds together and put in 9x13 pan. Cover with crushed Ritz crackers and drizzle with butter. Cook uncovered for 30 min. Serve over yellow rice.
