<description>&#60;p&#62;I usually make a lot of one pot meals that have all it mixed together.  So it'll be a pasta with a meat and a bunch of veggies mixed in.  Sometimes I'm just too rushed to get side dishes together during the week so if we're doing something like grilled chicken breasts that need sides, that usually happens on the weekends.&#60;/p&#62;
&#60;p&#62;However, for LO, we usually do the components of our meal for him and add some steamed veggies and a fruit.

<description>&#60;p&#62;We struggle with this because DH cooks and its often Meat +2 sides.  When I cook its more casseroles, crock pot, or 1 pan meals.  &#60;/p&#62;
&#60;p&#62;The other thing complicating it is that we have a hard time keeping fresh veggies on hand, and serving 2 frozen veggies is kinda boring.  So its usually a veggie and a starch.  For starches, my kids wont eat potatoes, so we do a lot of rice for them.

Veg are usually peas, corn. broccoli, green beans, sugar snap peas, cauliflower, edamame, spring mix, asparagus, baby bok choy, chinese broccoli&#60;/p&#62;
&#60;p&#62;Starch is usually rice, risotto, sweet potato, potato/homemade french fries/tator tots, Annie's pasta shells, pasta&#60;/p&#62;
&#60;p&#62;We don't offer fruits as part of the meal.

<description>&#60;p&#62;I guess I never really thought of them really as sides before, but most of our meals are protein + veggie + salad. I watch carbs especially in the evenings since we already have 2 days a week that are carb-heavy dinners so I won’t do white rice, bread, pasta or potatoes often (ditto to corn and peas).&#60;/p&#62;
&#60;p&#62;Heavy rotation in our house:&#60;/p&#62;
&#60;p&#62;Arugula, spinach, spicy baby greens (non-lettuce mix with mustard greens, baby bok choy, spicy greens, etc.) based salads topped with a couple of the following: avocado, nuts/seeds, radish, feta, goat cheese, dried fruit, black beans, etc.&#60;/p&#62;
&#60;p&#62;Roasted veggies: beets, sweet potato, Brussels sprouts, asparagus, eggplant&#60;/p&#62;
&#60;p&#62;“fried” green beans: get pan super hot with a bit of olive oil, toss in green beans and cook just 1-2 minutes on high heat. Turn off heat and add chopped garlic and lots of red pepper flakes. Beans are still crispy, garlicky and spicy.&#60;/p&#62;
&#60;p&#62;Grilled veggies: summer squash, zucchini, sweet peppers and onions&#60;/p&#62;
&#60;p&#62;Grain salads: quinoa and farro based, sometimes winterberry
&#60;/p&#62;</description>

<description>&#60;p&#62;During the week, I take a lot of short cuts, including steam ready rice, so I can put two sides out with dinner.  I often incorporate the veg into the main dish though, so I don't have a lot of pots and pans to clean up.&#60;/p&#62;
&#60;p&#62;I'll put grape tomatoes in the roasting pan when I am making salmon, I might put asparagus in with the pork chops, etc.
