We've been doing a lot of green smoothies lately. We also do grated zucchini/squash into meatballs and I add extra veggies to her pasta sauce + we use the pasta made with pureed veggies (every little bit counts!).

DS isn't opposed to veggies but he usually likes them more IN things than stand alone. He will eat corn on the cob or shredded raw carrot in some French dressing, and sometimes steamed mixed veggies like peas, corn, and carrots. I can usually add shredded or finely chopped veggies to most things and DS will eat it. Mac n cheese and omelets get minced broccoli or grated zucchini, risotto with shredded carrots and zucchini and corn and peas, etc. He likes cooked potato and carrot in things like sauce or stew so I always add lots of carrot chunks to things and usually zucchini because it sorta mushes up and it's not super apparent. I usually make our spaghetti sauce super chunky with bell peppers and onions and carrots and celery and then immersion blend it all together before adding in cooked ground meat and that bumps of the tally. He doesn't eat a lot of greens but truthfully we don't either because DH has gout and it sets it off. I do add chopped frozen spinach to things if I can remember.

@Madison43: I need to do this. I tried to do it with broccoli and she spit everything back out. Let's hope since cauliflower is white I'll have better luck?

The only way I can sneak in veg for the toddler if it's completely emulsified. Otherwise she will eat all the carbs and spit the vegetable back out. Sigh.

I think Jerry Seinfeld's wife got famous off this idea of sneaking good food / veggies into kids food... I think she even has a cookbook....

Googled... it's called Deceptively Delicious - Jessica Seinfeld.

I remember when she came out with the book she got a lot back lash... something about you shouldn't have to hide veggies form your kids... they should know what they are eating type of thing. Whatever!

My nanny family adds frozen peas or corn to Mac and cheese. It cools it down, and sneaks in some veggies. The kids seem to accept it no problem.

Eta: I make huge batches of pesto, with lots of basil, parsley, and garlic, and freeze it in ice cube trays or muffin tins, so I can just throw one in any sauce I make or thaw one out for pasta or to spread on chicken or fish.

It's not a sneak but we do green smoothies with kale or spinach and fruit every morning.

An actual sneak is we throw a whole bag of mixed frozen veggies in the food processor and put the "veggie dust" into pasta sauce when we make pasta or pasta bakes.

We also just eat alot of stuff where there are veggies in a sauce, like casseroles, chili, stew, curries. LO is more likely to eat veggies that way than if they are plain.

Do you try and sneak vegetables, or other healthy foods into your LO's meals? If so, how do you do it so they don't notice it? My kids are pretty good about eating veggies but I sometimes wish I could get in a little bit more, and thought sneaking some into meals may be the way to go.
