One that I make a lot is Beer-braised Pork & Black Bean Soup.. I don't even really like pork, but this is soooo good!(http://www.realsimple.com/food-recipes/browse-all-recipes/slow-cooker-beer-braised-pork-10000001694943/index.html).

My husband also really loves Tangy Italian Beef Sandwiches (http://www.bettycrocker.com/recipes/slow-cooker-tangy-italian-beef-sandwiches/f8c78113-de62-4197-9727-2e4d8116577e)

It's even good year round because it has lime and cilantro, so it's lighter tasting than regular chili. http://www.weightwatchers.com/food/rcp/RecipePage.aspx?recipeId=95071

I make roasts all the time, and then we shred the meat for sandwhiches with the left overs. I have made many for family get to gethers and have found the best seasoning ever, I use the beef and pork packets.

Seriously try these packets, they are amazing (and no I do not have any affiliation with the company, they just make roasts so darn good), we use it as gravy on potatoes too!

@Pipers Mommy: That sounds awesome. I made buffalo shredded chicken once, but only used the hot sauce so it was a little one dimensional. I think the ranch seasoning would be the key to make it that much better.

@bpcmarj: I usually cut it in half or quarters, depending how big the chicken is (so how small it has to be to stuff it in).
Oh and then I freeze the chicken stock in cupcake tins-- each is just about exactly 1/3 cup, so once they are frozen, pop them out and store them all in a gallon ziploc. I thinking putting a splash of vinegar is supposed to draw more nutrients out of the bones or something-- I read it somewhere on the internet, but then I always forget anyway.

I haven't made a whole lot but a pork shoulder with a 20 oz bottle of root beer makes GREAT pulled pork (low for 8 hrs, pull, mix with bbq: we use sweet baby ray's). You can even do it with frozen meat.

@MUI831: I made this the other day, and had lunches for a week! So good.

I like to make chili in the crockpot. I use the McCormick slow cooker packet of seasoning and generally the recipe on the back of it, too. I like my chili spicy so I will ususally substitute the diced tomatoes for original ro-tel. Also, I almost always use ground turkey instead of beef. Add in some frozed chopped peppers and onion and some corn and you have a well rounded meal. Yum. So good in the fall, especially on a football day. Honestly. we use the slow cooker McCormick packs for a lot of things (roasts, beef stew, etc).

I like to make shredded chicken, too. It's so easy in that you just put a couple of chicken breasts in the crock pot and cover them with your favorite jarred pasta sauce. Cook on low for 8 hours and shred. Serve over rice or pasta.

I make DH meatballs a lot, too. I don't have a recipe and I use jarred sauce for this (barilla roasted garlic adds good flavor). Just mix ground beef, breadcrumbs, an egg, and some spices and roll into balls. Stack in the crock pot and cover with your favorite sauce. Cook on low for 8 hours for the best flavor.

I like to make a full chicken in the crockpot. Season with salt and pepper, maybe a lemon or herbs in the cavity if you have them, squish the whole thing into the slow cooker, no water or anything, and put it on low. 8-10 hours later it's simmering in its own juices and really tender. The only thing is, it usually won't come out in one piece and you don't get the nice crisp skin like you would roasting it, but it's also never dry in some parts and over cooked in others (which always happens to me roasting). Then I use the leftover bits and all the bones for stock-- just throw it all back in (no need to wash the pot first!) with water to cover (6 cups-ish), some carrots, onions, whatever, and simmer on low overnight. Strain, put in the fridge for a day to let the fat solidify on top, scoop off the fat, and you are done.

@ladyfingers: IME, there's a few things you need to do to have chicken come out good - cook on low, cover the chicken totally with liquid, and don't put it on the bottom (put veggies first).

@Smurfette: I just made that last week! It was pretty good.

Hubby and I have been obsessed with slow cooker recipes lately. We've made 1-2 slow cooker meals every week for the last few weeks.

I found this website thru Pinterest: http://punchfork.com/recipes/slow-cooker

Yum! I haven't had a lot of luck with chicken breasts in the crock pot, they are always too dry for my taste. But my favorite lately is Korean Ribs.

Take a package of beef or pork spare ribs
1 c soy sauce (we use low-sodium)
1 c brown sugar
1./2 c water
5 whole jalapenos

Dump the whole thing in and cook on low for 8 hours.

Spare ribs aren't really cheap, but they've been on sale a lot lately at my supermarket so we've made a lot of this lately. It's so delicious with some rice and broccoli or green beans. Just made it yesterday!

I like to take about a pound of chicken breasts, a can of cream of chicken and herbs soup, a large can of chicken broth, 1/2 package of frozen chopped spinach and sometimes some artichoke hearts, and cook on low for 7-8 hours. The last 1/2 hour add in 1-2 cups of rice and cook on high.

I make these awesome crockpot BBQ shredded chicken sandwiches. They only take 3 hours on high! The sauce mix is also awesome on ribs. The key is to buy too BBQ sauce as a base, I always do Sweet Baby Ray's. For those that have stand mixers, the shredding is super easy if you throw the chicken in the mixer after 2 hours and use the paddle attachment. Shreds like a dream.

Bratwurst and sauerkraut.

Throw in some potatoes and carrots, add the bratwurst, top with sauerkraut and then add water or beer to just the top of the veggies. Keep on low heat all day. So yummy :-)
