@ladyfingers: One suggestion is don't bother with brining bags if you don't have to. My preferred method is to buy a new 5 gallon bucket with lid from Lowe's or Home Depot. Scrub it really really well. Put the brine in there and then put your turkey in. It fully covers the turkey with the brining liquid and you don't have to turn the turkey over partway through. This only works if you have the refrigerator space. We have one fridge in the house and one fridge in the garage so I clear out everything from two of the shelves in the garage fridge and slide in the bucket so it stays refrigerated.

We do a brine as well and we use Alton Brown's recipe as a base. Besides that my husband cooks it the same way his dad taught him the same way his dad taught him. High temp and 20 min flips. His gravy is to.die.for. He puts tons of veggies in with the turkey then use the drippings plus a little gravy master for color.

@ladyfingers: brine is def the way to go! My husband's turkey was never dry even w/o the brine. But the brine just made the white meat that much more moist!

@pelikila: Thanks, this has always intrigued me, and I think Martha has a brine recipe! I just might give this a try this year...

Soak your turkey in a brine. It makes a massive difference. My mom didn't believe me so one year she did her usual oven roasted turkey and I did my brined oven roasted turkey and my turkey disappeared a heck of a lot faster than hers. My favorite brine mix (though you can make your own, there are tons of recipe ideas online) is the citrus and spice one from Williams Sonoma. It is fool proof with the stuffing I make.
