<description>&#60;p&#62;I am solo Mon-Thur most weeks. She doesn't eat the same stuff as me. I cooke super easy stuff for both of us. Girlfriend loves her some Pasta Roni pasta, so that is my easy carb. Add a fruit or veggie and then frozen nuggets/fish sticks/turkey meatballs, and she is happy. I will make some turkey sausage and roast spaghetti squash, add some olive oil, feta, seasoning, and the sausage and boom I have dinner for two nights. I try and avoid eating out during the week cause we go out over the weekends since we are always on the go.

<description>&#60;p&#62;DH just about never gets home before dinner, and usually my toddler, 5 month old, and I are all in a cranky mood by dinner time, so I do lazy almost every night. Or I make something during nap time that can be cooked/ final prep very quickly at dinner (slow cooker or stick in the oven but no other prep). I used to really enjoy cooking but it's not enjoyable with everyone whining at me and under foot, or starting after both kids are asleep at 8:30. &#60;/p&#62;
&#60;p&#62;So frozen tortellini and meatballs, chicken nuggets, Mac and cheese, pasta, are all in heavy rotation. When the baby is a little older hopefully I can cook more!

<description>&#60;p&#62;I always have stuff in the freezer for my solo nights when there are no leftovers. But more often than not, we cook enough food the night before so I only have to reheat.&#60;br /&#62;
Last night we had leftover grilled teriyaki beef and I made some couscous with (hidden) spinach to go with it. Easy and quick which is perfect since I had to stay at work 20 minutes later than usual.&#60;/p&#62;
&#60;p&#62;We grab take out maaaaybe 2x a month. Tonight is a takeout night since we need to grab the kids and run to the opticians after work. So we're going to eat out tonight afterwards .A rare weeknight treat for the kids!&#60;/p&#62;
&#60;p&#62;Tomorrow is a solo night so we're going to do all the dinner prep tonight after the kids are in bed. I'm making Chinese - steamed black bean garlic rib(lets), stir fry fish tofu and jasmine rice. that usually takes 30-40 minutes to get on the table!

<description>&#60;p&#62;I'm one of those mom's who makes dinner every night even though I work out of the house. I enjoy cooking and it's not a huge inconvenience for me. However, tomorrow I'm solo parenting, DH is going on a golf trip for the next few days with friends. And instead of trying to whip up a dinner, I think a frozen pizza is in our future. Honestly can't tell you the last time I've made a frozen meal and I can't wait for the work to be done for me! And we will be using paper plates too for no clean up ;) When do you take the easy route?
