DH's go to quick and easy meal: 16oz jar salsa of your choice, 2 cans of drained/rinsed beans (he usually uses black beans) - combine in a skillet and heat up. Make 4-5 wells and crack an egg into each then cover with a lid and cook until the eggs are your desired consistency. DH likes the egg yolks to be runny, I prefer them more like a hard boiled egg so we just take out his portion and then let mine cook a little longer.

@runsyellowlites: I've resorted to ramen once this week. I keep waking up with my nauseating hunger and need something filling in like 1 second. I'm gonna have to start eating my ramen dry if this gets much worse lol.

These are all really great nummy ideas! I think I may actually add some of them to our meal plan this week (since I never got around to actually making one)

@anonysquire: I despise cooking & so I usually default to picking something up... I'm trying so hard to stop though! And G would love if I let him eat Ramen! lol

Ramen? Actually when I'm needing something quick and easy I just speed over to Arby's/Wendy's/taco bell. All 3 are a minute away.

Whenever I want something quick but still really yummy and warm I do grilled cheese! Usually with turkey or ham (just lunch meat) and I throw in whatever nice cheese I might have lying around and sliced tomato if I have it.

@runsyellowlites: This is my go-to too hot to cook in the house dinner - Thai-style Chicken Salad

http://www.bitchincamero.com/2011/08/thai-style-chicken-salad/?utm_source=feedburner&utm_medium=feed&utm_campaign=Feed%3A+bitchincamero%2Fmel+%28bitchincamero%29

I use the store bought bottle of herbs, instead of using lemon grass I use Thai Style, it's in the vegetable/herb section, oh and if I don't have a shallot then I use an onion, and if I don't have angel hair coleslaw I use pasta (like bow-tie). I'm scared of bagged salads right now, and I was thinking of making this tonight, so I'll be using pasta!

@Sugar.Biscuit: That sounds so good! I'll have to come back to this when it starts to get cooler! It's just so stinking hot here & the way our house is set up using the oven makes it pretty warm for the rest of the evening. :(

Runza casserole! Place a roll of crescent rolls on the bottom of a 9x13 pan. Ground up and cook 2 pounds ground beef. Add one or two bags of shredded cabbage & allow it to steam till the cabbage is soft. Also add salt, pepper, and garlic to taste. Place over bottom layer of crescent rolls cover with your choice in cheese, swiss, mozzarella, cheddar, pepper jack... Add another later of crescent rolls to the top. Bake at 350/375 for about 20 min till the crust is golden brown.

You can add mushrooms if you want to make it like a swiss mushroom burger, or even pickles onions etc.

Also I think Pillsbury has dough sheets you can use now instead of the crescent rolls.

Whoa! I walked away for a second & you ladies gave tons of ideas! Thanks!

I think I might go for some easy pasta... maybe the tortellini to give some variety!

I would love to get a rotisserie chicken but my crazy child doesn't like it & he refuses to eat it. :(

@Mrs. High Heels: We've never had quinoa but I've been wanting to try it! I'm not very cook savvy so I think I'll add this to a night where I feel like trying something new!!!! :)

My fave easy/quick prep time has a long cook time :/
Roasted veggies (beets, carrots, potatoes, onions with oil and seasonings) but it takes like 40-60 minutes. Really easy though, pretty much all you do is chop! I usually cook some chicken to go with it, but that can cook while the veggies are roasting

ETA: DUH - you said no baking. So much fail!

If you don't mind the oven, we frequently buy some form of meat (chicken most often), dump some sauce on it (bbq, buffalo, etc), and just bake it. Takes maybe a minute of prep time, and doesn't even cook that long. Some kind of quick side like a can of beans, and you're good to go.
