This is a favorite of mine that my husband requests for special occasions and is relatively easy to make:

https://www.blueapron.com/recipes/fresh-gnocchi-maitake-mushrooms-with-sweet-corn-thyme-brown-butter--2

I usually serve it with steak.

For presentation purposes: put your carb (mashed potato or rice/ grain) in a measuring cup (1/4 or 1/3 cup) and the flip it over the plate. Ramekins also make things look fancy. You can bake an appetizer of mac & cheese in there or use it for individual bread pudding or even a scoop of ice cream, cookies/ wafers and mint leaf garnish. For sauces you can use a squeezy bottle to create designs. I have found two packs sold at places like Bed Bath and Beyond.

Champagne toast

First course: baby arugula salad with green apples and goat cheese (or similar “fancy” salad)

Main:

Whole roast chicken (the best recipe/technique I’ve tried is in the Zuni Café cookbook; you can also find it explained here (and you can omit the herbs and just so a dry salt brine, that’s all we ever do). Crispy skin, juicy meat every single time http://www.thekitchn.com/how-to-make-a-zuni-cafe-roasted-chicken-at-home-34903

Potato Gnocchi (topped with sauce of choice): https://cooking.nytimes.com/recipes/1014559-potato-gnocchi-four-ways

Lobster salad and great Italian/French bread: if you can get lobster at a reasonable price, just take the cooked chop meat and mix with a SMALL amount of mayo, a good squeeze of lemon and a bit of salt and pepper. Serve with a good crusty loaf of bread.

Homemade vodka sauce over fresh and/or handmade pasta

Dessert: Panna Cotta is ridiculously easy to make and people always seem impressed by it. It’s rich, creamy and something different. Presentation tip: I make mine in individual sized vintage glass bowls or crystal glassware – again, easy but different/special. http://www.epicurious.com/recipes/food/views/panna-cotta-14224

I usually ask DH what he would like, so it varies, but he has asked for chicken marsala, eggplant parmesan, and steak au poivre. I usually try to make a nice dessert as well. I recommend the chocolate lava cakes from Iowagirleats.com as a easy but fancy dessert!

I typically do a whole roast chicken with potatoes and gravy. Either that or just some simple fried Rosemary cutlets with gravy. My husband loves gravy and I don't make it that often.

A roast chicken over veggies and potatoes. A whole roasted chicken is SO easy and it looks really impressive. I would also get his favorite beer and maybe a bottle of wine to share.

My DH is a steak and potatoes guy, so I would go to the butcher and get nice T-bone and marinate it the way he likes. I would do parmesan garlic roasted red potatoes, jalapeno poppers, and probably ice cream cake since that is his favorite (not super fancy but well he's not that fancy and I know it's what he'd like ha)

This is super easy and looks impressive when you make the whole filet (and then you have leftovers!)

http://www.marthastewart.com/336014/herb-crusted-salmon-with-roasted-lemons

I make it with couscous or quinoa cooked in onions, chicken broth, and thyme.

I serve it with a salad, like arugula or mache with goats cheese and fresh berries and nuts. And roasted veggies like asparagus, which will cook at the same time as the fish.

I do Gordon Ramsey's beef wellington. I find watching the video is much more helpful than a text recipe.

https://www.youtube.com/watch?v=5uXIPhxL5XA

The trick is to sear the beef on all exposed surfaces in a super hot cast iron pan and make sure you roll out the puff pastry REALLY thin.

Are you doing a pre dinner cocktail? I really like the Bourbon Spice Rack, it is really unusual but soooo good.

When I want to do something special, I like to do individual filet mignons, wrapped in bacon and crusted with mustard and pecans. I also like to serve that with a lobster tail and drawn butter.

Dessert I like to buy something from the bakery...there's one near us where I can get say, 3 small things, like a tiramisu, a cheesecake and a chocolate mousse.

DH just got a promotion and I'd like to cook a fancy-ish meal on Saturday and do a high-end, at home date night on Saturday to celebrate.

What are some of your proven "nice" dinner recipes? I don't want to just pull a random internet recipe and have it be a flop.
