&#60;p&#62;My easy-peasy delicious chili:&#60;/p&#62;
&#60;p&#62;1 lb ground beef&#60;br /&#62;
1 chorizo sausage (optional - I just use it for the flavour, take out of the casing and brown it with the ground beef)&#60;br /&#62;
2 stalks of celery chopped&#60;br /&#62;
2 jalapeno peppers chopped (with or without the seeds, depending on how much spice you like)&#60;br /&#62;
1 bell pepper diced&#60;br /&#62;
1 onion chopped&#60;br /&#62;
1 cup corn (I use frozen, not canned)&#60;br /&#62;
1 19oz can of kidney beans, rinsed and drained&#60;br /&#62;
1 28oz can of diced tomatoes&#60;br /&#62;
2 tbsp of chili powder&#60;br /&#62;
2 tsp of oregano&#60;br /&#62;
ceyenne powder (optional - for spice factor)&#60;br /&#62;
salt and pepper to taste&#60;/p&#62;
&#60;p&#62;1. Brown the meat and drain fat, set aside&#60;br /&#62;
2. In a large pot, saute all the veg (except the frozen corn) until soft&#60;br /&#62;
3. Add in all the spices and corn, mix well&#60;br /&#62;
4. Add the meat, stir&#60;br /&#62;
5. Add beans and tomatoes, mix&#60;br /&#62;
6. Taste and adjust seasoning&#60;br /&#62;
7. Simmer on low for 30min-hour...Doesn't matter.  If it's too soupy, just simmer uncovered until it thickens.&#60;/p&#62;
&#60;p&#62;Tastes better the next day!  This makes a big pot of 6 portions.
