<description>&#60;p&#62;The key to a good stirfry for me is to cook each component separately.  Cook the meat first, then the harder veggies, then the softer veggies.  Then combine everything together at the end with the sauce and any herbs or sprouts.&#60;/p&#62;
&#60;p&#62;Apricot Stir-fry Sauce&#60;br /&#62;
Yields about 2 cups (enough for 2 stir-fry recipes)&#60;/p&#62;
&#60;p&#62;Delicious stir-fry sauce, especially good with chicken breast.  Add toasted almonds or cashews for a treat!&#60;/p&#62;
&#60;p&#62;Ingredients&#60;/p&#62;
&#60;p&#62;2 teaspoons ​​cornstarch&#60;br /&#62;
1/2 cup ​​cold water&#60;br /&#62;
10 oz. jar​         apricot jam or preserves (approx. 1 cup)&#60;br /&#62;
4 tablespoons ​soy sauce&#60;br /&#62;
4 cloves​​minced garlic or 1 tablespoon garlic powder&#60;br /&#62;
2 tablespoons​minced ginger or 1 teaspoon ginger powder&#60;br /&#62;
1/2 teaspoon ​​crushed red pepper flakes or 1 teaspoon Sriracha&#60;/p&#62;
&#60;p&#62;Directions&#60;/p&#62;
&#60;p&#62;1. Whisk water and cornstarch together.  Then add in the remaining sauce ingredients.  Whisk together.  If necessary, add a little water to the sauce to total 2 cups.  Keep in fridge.&#60;br /&#62;
2. Use about 1 cup of sauce for every pound of meat.&#60;/p&#62;
&#60;p&#62;Recipe Remix: Orange Stir-fry Sauce&#60;/p&#62;
&#60;p&#62;Same recipe, but use orange marmalade and add 1 tablespoon of vinegar (more if you like it really tangy).

&#60;p&#62;1 tablespoon oil&#60;br /&#62;
2 cloves garlic, finely minced&#60;br /&#62;
2 tablespoons fresh ginger, finely minced&#60;br /&#62;
⅓ cup low sodium soy sauce&#60;br /&#62;
1 teaspoon BBQ sauce&#60;br /&#62;
2 tablespoons smooth peanut butter&#60;br /&#62;
2 tablespoons honey&#60;br /&#62;
1 cup matchstick carrots&#60;br /&#62;
1 cup sugar snap peas (or frozen peas, or broccoli, or zucchini, or...)&#60;br /&#62;
¾ pound cooked chicken breasts or thighs, cut into bite-size pieces&#60;br /&#62;
2-3 cups cooked rice (depending on how much rice you like to eat as a family)&#60;br /&#62;
½ cup whole or chopped peanuts, optional&#60;/p&#62;
&#60;p&#62;In a large skillet, pour oil and cook garlic plus ginger for about 2 minutes on medium-low heat. Add soy sauce, BBQ sauce, peanut butter and honey. Taste it and add salt and/or pepper plus a little more of either sauces as you like. Bring to a quick boil, add ½ cup water and stir.&#60;br /&#62;
Add vegetables plus chicken, bring to a simmer again and turn off heat. The veggies will continue cooking in the hot liquid so get the rice ready on plates and serve as quickly as possible. Top with whole or chopped peanuts.

&#60;p&#62;Ingredients&#60;br /&#62;
2 tablespoons canola oil, divided&#60;br /&#62;
1 pound ground chicken breast&#60;br /&#62;
1 small onion, thinly sliced&#60;br /&#62;
3 garlic cloves, minced&#60;br /&#62;
1 tablespoon grated fresh ginger&#60;br /&#62;
3 cups green beans cut in half&#60;br /&#62;
3 cups broccoli cut into 1/2-inch pieces&#60;br /&#62;
3 cups thinly sliced cabbage&#60;br /&#62;
1 1/4 cups thinly sliced shiitake mushrooms&#60;br /&#62;
3 tablespoons soy sauce&#60;br /&#62;
2 tablespoons sriracha (a hot chile sauce)&#60;br /&#62;
1 tablespoon rice wine vinegar or lime juice&#60;br /&#62;
3 scallions (green and white parts), sliced&#60;br /&#62;
1 bunch cilantro (about 3 cups chopped)&#60;br /&#62;
1/8 teaspoon salt, optional&#60;br /&#62;
1/4 cup chopped peanuts &#60;/p&#62;
&#60;p&#62;Instructions&#60;br /&#62;
Heat a sauté pan over medium-high. Add one tablespoon oil, then add chicken. Cook until no longer pink. Remove from pan and set aside. In the same pan add remaining oil and onion. Cook till translucent (3 minutes). Add garlic and ginger. Cook 1 minute. Add green beans, broccoli, cabbage, and mushrooms. Cook till slightly tender (5 minutes). Add soy sauce, sriracha, and vinegar. Cook to reduce slightly (3 minutes). Return chicken to pan. Add scallions and cilantro. Turn off heat. Season with salt. Top with peanuts. Serves 4.

<description>&#60;p&#62;i don't necessarily have a recipe - but my go-to fave is cooking the chicken in sesame oil... then i make a sauce with ginger, garlic, soy sauce, a little fish sauce, red chili pepper flakes, and sweet chili sauce. Toss in veggies and top with green onions! YUM.
