<description>&#60;p&#62;I knew we had a container in our fridge that was passing the date so I pulled it out b/c I just had to know! So...&#60;/p&#62;
&#60;p&#62;This is what a 3/15 container looks like right now. I tried a piece and thought it would taste great with jjajangmyun!  :grin:  And man does the kitchen reek right now. So I doubt it would last much longer than the date.&#60;/p&#62;
&#60;p&#62;(For the record, our fridge is super super cold and almost freezes things.)&#60;/p&#62;

<description>&#60;p&#62;@locavore_mama:  Okay, so my mom brought some radish kimchee when she came to visit 2/24. I tasted one that day and it wasn't ready and tasted too bitter. I just tried some a minute ago and it's perfect. I probably have to finish it in 2 days or it'll be too fermented and I'll have to cook with it. &#60;/p&#62;
&#60;p&#62;My guess is your cubed kimchee will have to be eaten within 2 weeks.

<description>&#60;p&#62;@chopsuey:  Leave it out on your counter for a day to ferment.  It should taste fine after that.&#60;/p&#62;
&#60;p&#62;@locavore_mama:  You can keep it in a plastic tub but yeah it will stain/smell afterwards.  My mom actually will keep the kimchi in a plastic ziploc freezer bag, and then put the bag in a big tupperware, so its lined.  She always says to transfer small portions into a smaller container as you need it (i.e. at each meal or two) instead of eating straight from the big container every time because you will make the kimchi ferment too fast?
