<description>&#60;p&#62;All purpose gf flour should most likely be okay. It would be better to use a mix of a few flours (which AP usually is) as opposed to all almond flour, or all coconut flour for example. They should hold up just fine. &#60;/p&#62;
&#60;p&#62;And the dough will keep in the fridge for ages. Like, at least a week, if you wrap it in plastic wrap first, then tinfoil.

<description>&#60;p&#62;Some of the packaged cookie mixes make tasty dough - but the ones I've tried aren't very good for rolling/cutting - they are softer, for drop cookies.&#60;/p&#62;
&#60;p&#62;I have a pretty easy sugar cookie recipe that makes a lot, freezes really well, and is pretty tasty (if you want to go the homemade route). &#60;/p&#62;
&#60;p&#62;1 1/2 cups butter&#60;br /&#62;
2 cups white sugar&#60;br /&#62;
4 eggs&#60;br /&#62;
vanilla extract (or other flavouring)&#60;br /&#62;
5 cups all-purpose flour&#60;br /&#62;
2 tsp baking powder&#60;br /&#62;
1 tsp salt&#60;/p&#62;
&#60;p&#62;Beat butter and sugar until light and fluffy. Add in vanilla, beat until combined. Beat in eggs one at a time. Sift together flour, baking powder, and salt, and add this slowly to the wet ingredients. Roll dough into a few balls, refrigerate for about half hour. Roll, cut and bake on a cookie sheet for about 10 minutes, depending on the size of your cookie. &#60;/p&#62;
