<description>&#60;p&#62;Rachel Ray has a recipe for Winter White Cacciatore (don't let the name turn you off for a summer meal) that's great in the crockpot.  It's basically white wine instead of red wine, and it's very light.&#60;/p&#62;
&#60;p&#62;You can also do minestrone, which I tend to think of as a summer meal, since we only eat it in the summe when we have garden fresh veggies.

<description>&#60;p&#62;We make our ribs and chicken wings or chicken drumsticks in the crockpot.  They are usually 4-6 hour recipes, so not something I would leave all day at work.  The ribs I just rub down with mustard and whatever dry seasoning you like (lately its Costco's mesquite seasoning) and stand the ribs sideways in the crock (I cut a rack in half).  Leave for 4-5 hours until tender.  Slather with BBQ sauce and throw under the broiler for 4-5 minutes until the sauce has bubbled and thickened on top.  Basically the same for chicken - whatever dry seasoning you like, then run them under the broiler.  Tender and juicy and delicious every single time.&#60;/p&#62;
&#60;p&#62;This is OUTSTANDING.  We add sliced bell peppers and bamboo shoots and zucchini to amp up the veggies and use coconut cream instead of coconut milk to get that extra rich Thai restaurant sauce.&#60;/p&#62;
