<description>&#60;p&#62;I am on the hunt for simple summer meals as well and I've come across some interesting options, but I don't know how kid friendly they would be.  Keep in mind that my husband and I like to eat a lighter dinner (substantial breakfast and lunch) and we're fairly open to new flavors.&#60;/p&#62;
&#60;p&#62;I am planning on trying a savory cake with goat cheese, prunes and pistachios as well as another version with bacon and cheese.  Then you just assemble some salad and you have a meal.&#60;/p&#62;
&#60;p&#62;A super kid friendly meal is Impossible Pie.  You can't freeze it assembled, but you can freeze the &#34;main&#34; and then mix the batter and bake on a dinner night.  It's easy enough that the kids can even help!&#60;/p&#62;

<description>&#60;p&#62;This sweet potato black bean chili is really great in the slow cooker.  I add a spoonful of cornmeal or some refried beans at the end to thicken it up.  Tastes great on top of nachos too.&#60;/p&#62;

&#60;p&#62;You can pretty much take any recipe that uses chicken (curry, soups, stews) and swap out with chickpeas to make them vegetarian.  I adore this mild, creamy curry and you can cook it ahead and freeze it (except for the coconut milk to add later).&#60;/p&#62;

&#60;p&#62;You can prep bean and cheese enchiladas in advance and freeze it.  Just roll tortillas up with refried beans and cheese, dump with your favorite enchilada sauce and more cheese, and freeze.  Thaw overnight, bake off for dinner, and then serve with a a salad.&#60;/p&#62;
&#60;p&#62;Another easy freezer friendly dish is making sloppy joes with lentils.  I'm partial to red lentils, but any kind of lentil works.  You can cook up a huge batch of it and portion it out.  Just reheat and serve with buns, carrot sticks, and fruit for a kid-friendly meal.&#60;/p&#62;

&#60;p&#62;Ravioli lasagna is just about the fastest freezer meal you can make.  Just dump a layer of frozen ravioli in a pan, layer with sauce and cheese, repeat another layer if you want, and bake.  It takes no time at all to assemble on the day of so I wouldn't even bother worrying about prepping this one in advance.  You can easily add in some chopped frozen spinach or mushrooms or olives to spice it up.&#60;/p&#62;
&#60;p&#62;Also, make (or buy) pizza dough and freeze.  Just throw one in the fridge to thaw the night before and just assemble your toppings the next day.  You can have just plain cheese, or keep some pepperoni at home, or just run through the salad bar at your supermarket on the way home and grab some veggies for toppings.

<description>&#60;p&#62;Does it have to be vegetarian based since I'm assuming you're the only non meat eater? What about meals that have  a healthy veg side? We always tend to do a protein, veg and starch of some kind. &#60;/p&#62;
&#60;p&#62;Freezer meals are hard in the summer! But some quick meals I can think of are shish ke bobs you can assemble the night before. Ours always have onions, peppers squash/Zucchini so you can easily make all veg ke bobs for your self. &#60;/p&#62;
&#60;p&#62;Grilled cheese and cold tomato soup like gazpacho? &#60;/p&#62;
&#60;p&#62;Pasta salad is a summer fave of ours. Again, quick and easy. We make ours all vegetarian with cukes, tri color peppers, cherry tomatoes. Then you can always grill up some chicken breast for else. &#60;/p&#62;

It outlines a menu of freezer meals and has recipes.....you obviously don't have to do all but might be a good jumping off point for you. I have also had good luck with freezing veggie enchiladas, empanadas, and lasagna.

<description>&#60;p&#62;Mid-June I go from mom of one toddler, to mom of toddler, 8 year old and 12 year old! I want to make ahead a few meals that I can easily pull from the freezer, since I will be working full time still as well. Any suggestions? LO eats just about anything (he's one, and he still just has 4 teeth). The two older kiddos aren't too picky either, luckily. However, I am a vegetarian! Stuff without meat, or that meat could be added on the side would be great.&#60;br /&#62;
We have a good sized freezer, and we own a crockpot.&#60;/p&#62;
