You all make good points in just having meat available in the freezer so it's easy to throw on the grill. We eat so much more in the way of fresh veggies and salads with grilled meats. I'll have to add more breakfast sandwiches and burritos to my list. I just remembered that I made a lot of taquitos last time and those were great to pop in the toaster oven. Thanks! As usual, I over think things. :)

You've already had some breakfast suggestions but I recently made a bunch of breakfast burritos to freeze and I LOVE having them ready to go. It took me a little over an hour and I estimate around $20 to make 20 of them. You could do the same with regular burritos. Yum I want to eat one now just talking about it. :)

We usually grill a lot in the summer and eat a ton of salads, but you can freeze taco filling for tacos! Also just marinated chicken to grill and go. Breakfast burritos or bakes are good, too

For our summer baby I found it helpful to freeze muffins and pancakes/waffles for breakfast. I also froze tomato soup to eat with grilled cheese sandwiches for lunch. And twice baked potatoes or cooked grains (quinoa, farro) to eat with grilled meat and veggies. Like you said, when it's 100 degrees outside I don't really want to be eating a heavy casserole or using the oven.

I'm having a March baby but I agree we eat way different in summer than fall/winter. last time I had a bunch of casseroles froze, that's not how we eat. So this time, we are stocking up on meat to grill because 4x a week that's what we do. I make my pulled pork/chicken in crockpot so I don't feel the need to freeze it, I can stick it in and let it cook all day when I'm home on maternity leave.

I plan on making and freezing breakfast sandwiches, muffins for breakfast for me. As for lunch, I plan on marinating chicken on Sunday and topping it on salads and then just doing tuna/egg/chicken salad sandwiches for the remainder. It's a little bit of cooking, but I figured I can swing 1-2 hours on Sunday to get it prepped and eat it for the week!

I don't know about you but we eat differently in the winter vs the summer. So I've been thinking of what types of meals that I can make in advance to have our freezer stocked once baby #2 comes this June. What types of freezer meals do you like to have in the summer? The only ones I could really think of are pulled pork, chicken, and seasoned ground beef for sandwiches, salads, tacos etc. I'd like to stay away from heavier pasta casseroles and soups.

Any other good suggestions to have in the freezer for lunches and snacks that can be eaten with one hand? I will be making a bunch of various muffins and maybe some homemade granola bars but was stuck on some other savory items.

Thanks!
