<description>&#60;p&#62;I like mine very simply roasted... peel and cut in cubes, spread out in a single layer on a foil lined sheet. add some coconut oil on top and brush to coat. add some salt and pepper. 400 degrees for 25ish minutes. &#60;/p&#62;

<description>&#60;p&#62;@travelgirl1:  You can try putting your baking sheets in the oven for 15 minutes before pouring the sweet potatoes onto it.  That way the sheets are nice and hot, when the potatoes make contact they will sizzle and develop a nice brown edge.  If you do it this way, remember to grease up the baking sheets really well or cleanup will be a mess.  And of course, no stacking :)

<description>&#60;p&#62;I love to mash sweet potato with a turnip/rutabaga.  I love turnips but they can be a bit intense so to mix it with the sweet potato you get the best of both worlds.  You can also add crumbled bacon and make a great side.  &#60;/p&#62;
&#60;p&#62;Otherwise I slice them super thin with a mandoline and bake for sweet potato chips.  I like to spice them up with chili lime seasoning or something like that.

bake at 425 for 35 minutes or so (make sure your wedges are not stacked on top of each other or they will not &#34;crisp&#34;)&#60;br /&#62;

&#60;p&#62;Spicy scalloped sweet potatoes are very easy. Preheat oven to 375.Peel and slice into 1/8th inch thick slices. Take 3/4 cup heavy cream and whisk in 1/2tsp of cayenne pepper, and salt and pepper. Arrange sweet potatoes(you should need 2) into a layer on the bottom of 8x8 dish. Pour part of the cream mixture over potatoes and repeat layers (3). Cover dish with tin foil. Bake for 30 minutes. Remove tin foil and bake for an additional 30 or until top caramelizes.&#60;/p&#62;
&#60;p&#62;Sweet Potato and Goat Cheese Ravioli in a Brown butter sage sauce.&#60;/p&#62;
&#60;p&#62;Bake 1 sweet potato. Then scrape out into dish. Add 3tbsp goat cheese. Salt, pepper, paprika, and garlic powder. (If you like spicy food you can also mash up a chipotle pepper into the mix) Mash together with a fork. Add 1 tbsp to a wonton wrapper (can be found in produce section). Seal into a triangle. Boil in water for 3 minutes. &#60;/p&#62;
&#60;p&#62;Upon removing from water add to brown butter sage sauce and sauté on each side for approx 1 minute. Take 4tbsp butter and put into sauté pan on low. Simmer on low and add 3 diced fresh sage leaves. Saute until butter caramelizes and turns brown approx 5-7 minutes.  This recipe yields 25 ravioli. &#60;/p&#62;
&#60;p&#62;One potato can go a long way!
