<description>&#60;p&#62;There are lots of tasty quinoa casseroles! @skipper2010 has a good point too - you could also do an egg casserole.&#60;/p&#62;
&#60;p&#62;I LOVED won-ton/egg roll wrapper appetizers that I made before LO arrived because they were easy to reheat. I made mine as tiny little sausage pizzas but you could put whatever you wanted in them.  Just cook ingredients, spoon them in, use water to seal the wrapper in a triangle and bake at 350 for 10 minutes, and then freeze... could do spinach &#38;amp; cheese, beans &#38;amp; rice, etc.

<description>&#60;p&#62;I make a black bean and spinach enchilada with a butternut squash sauce. Some dairy, but not a lot. I also make a sweet potato, black bean and quinoa chili, but I don't know if it's too warm for that where you are. You could also make up a bunch of veggie burgers or something that they can have in the freezer and pull out later.

<description>&#60;p&#62;A friend had her baby over the weekend, and I'm signed up to take her a meal in the next two weeks. They are not strictly vegetarian or vegan, but I know that is more their preference for health reasons. I'm at a loss as to what to bring her. I'm looking for a meal that is vegetarian, preferably low or no dairy, and not pasta. Everyone else has signed up to bring her a pasta dish! Any ideas? I'm stumped!
