<description>&#60;p&#62;@lindseykaye: okay, you've convinced me it's okay to use a mix for the gravy, at least for the base of it.  I have had good luck with the kitchen basics brand unsalted chicken stock, so I can use that plus some of what comes out of the pan for flavor.  I think I could also make the roux for the gravy earlier in the day, but I will get a packet and plan it by ear.&#60;/p&#62;

<description>&#60;p&#62;If you don't want to do full on homemade gravy - I've had luck making it out of a packet and subbing broth and pan drippings for some/all of the water called for. The texture is nice, the flavor is more predictable but the addition of broth and drippings takes it up a notch from the everyday (without going all out).&#60;/p&#62;
&#60;p&#62;And I go with purchased, prepared rolls that can be warmed just briefly in the oven before setting out. Either something bought from the bakery, or frozen rolls that I baked earlier in the day or the day before. Once everything has been pulled out and is being put on the table/buffet I immediately pop the rolls into the newly emptied oven and they're warm within 5-10 minutes. Usually it takes that long to get everything sorted and the timing works out.&#60;/p&#62;
&#60;p&#62;I go all out making the other dishes from scratch, so I take shortcuts where I can get them (and where my family doesn't mind or miss the homemade version).

&#60;p&#62;Gravy Recipe&#60;/p&#62;
&#60;p&#62;Chicken broth- full fat&#60;br /&#62;
Butter&#60;br /&#62;
Onions- slice thin in short slivers&#60;br /&#62;
White flour&#60;br /&#62;
Giblets/ Neckbone- you may be able to find this sold separately.&#60;br /&#62;
Seasoned salt (Lawry's)&#60;br /&#62;
Black pepper&#60;br /&#62;
Poultry seasoning&#60;/p&#62;
&#60;p&#62;*Simmer giblets and or neckbone in chicken broth until cooked through. Chop and shred finely. Set aside.&#60;/p&#62;
&#60;p&#62;*Sautee onions in butter. Set aside.&#60;/p&#62;
&#60;p&#62;* Add butter, add flour to make a rue. Season with salt, pepper and poutry seasoning. Add more butter to make it darker. Continuously whisk.&#60;/p&#62;
&#60;p&#62;*Add a little bit of broth, giblets, and onions. Whisk. Determine if you need more flour while things are still not super wet.&#60;/p&#62;
&#60;p&#62;* Add more broth to make the right amount of gravy. Low simmer. Taste and add additional seasoning if needed.

&#60;p&#62;1. Gravy.  This year is the first year I am making a turducken and I have no idea what the pan drippings situation is going to be like.  I don't want to wait to find out and honestly my gravy and every one elses's always tastes like crap!  Should I go with no gravy, use a storebought one, or do a make ahead?  If you've done make ahead, do you have a tried and true recipe?&#60;/p&#62;
&#60;p&#62;2.  Rolls: i don't have the oven space to bake something in time for it to be done at dinner, so I was thinking either cornbread or maybe parker house rolls?  Any ideas?
