My LOs (almost 4 and just turned 1) love roasted broccoli, it is SO much better than steamed. I find that most roasted veggies taste much better than when steamed.

Also, this spinach dish is always a big hit around here. http://smittenkitchen.com/blog/2011/03/the-best-baked-spinach/

You can hide a lot of purees veggies in spaghetti sauce. Sweet potatoes, carrots, squash and leafy greens work really well!

Ladies, I've hit a wall with feeding my almost 22-month old. She used to be such a good eater and now, not so much. She is great with protein, carbs (what kid isn't?!), and certain fruits (berries, banana, pear). When it comes to green veggies though....its a battle! She used to eat all kinds of steamed green veggies but now refuses. So now I find myself having to hide it in stuff like spinach in smoothies, broccoli in quinoa bites, etc. I've run out of ideas! Has anyone ever used a good cookbook catering to toddlers and how to make creative veggie options? Bonus points if these are recipes I can make ahead in bulk and freeze!

I'm willing to spend the time to try anything!
