<description>&#60;p&#62;@lady grey:  we made the same recipe with zucchini instead of carrots this weekend and they're just as good. I used 1/4 cup packed brown sugar instead of the honey and the sweetness is just about right for us. If you decide to make zucchini muffins at some point, make sure to drain the shredded zucchini for awhile before mixing it in, otherwise the batter will be too wet!

I usually sub yogurt for half the applesauce and cut the honey way down -- last time I halved it and thought they were still too sweet so next time I'll probably use 2-3 tablespoons and see how it goes. I think they're good with all whole wheat flour but DD doesn't like them so dense, so I either use white whole wheat or 1 cup regular whole wheat plus 1/2 cup all-purpose. I bet it would be great with 1/2 cup WW, 1/2 cup all-purpose, and 1/2 cup coarsely ground oats, too! I might try that next time.

<description>&#60;p&#62;I make America's Test Kitchen's oatmeal muffins but no streusel topping, add cinnamon to the batter and cut the sugar down to like half.  And then I add raisins or currants to the batter.  My son needs the calories so I keep all the fats in recipes.  Finely minced pecans could be good.
