Total hit in our house. LO devours them each and every time. Even my husband the oatmeal hater loves it. I add plain greek yogurt for extra protein.&#60;/p&#62;

<description>&#60;p&#62;@septca:  I'm digging the baked oatmeal!  That might be what I start making for DS's breakfast and I think I have everything at home right now.&#60;/p&#62;
&#60;p&#62;I make a double batch of these carrot pancakes from Weelicious (&#60;a href=&#34;http://weelicious.com/2010/04/01/carrot-pancakes/&#34; rel=&#34;nofollow&#34;&#62;http://weelicious.com/2010/04/01/carrot-pancakes/&#60;/a&#62;) and freeze.  &#60;/p&#62;
&#60;p&#62;DS is currently so hit or miss on protein so I&#34;m not too helpful in that area.  Currently he's a big fan of hummus and peanut butter so we try to give him some of those in some form.  He is also apparently one of the few kids who isn't into dipping things so many times he'll just eat those with a spoon.&#60;/p&#62;
&#60;p&#62;I also make quinoa bites made in a mini muffin pan and freeze those.  Meatballs are also good and toddler friendly.

<description>&#60;p&#62;Here's mine:  16 mo DD LOVES this baked oatmeal recipe.  Bonus - it's super easy and takes very few dishes to make.&#60;/p&#62;
&#60;p&#62;Butter the bottom of a 9x9 baking pan, and - in the pan - mix together:&#60;br /&#62;
2 c. old-fashioned rolled oats&#60;br /&#62;
1 t. baking powder&#60;br /&#62;
2 t. cinnamon&#60;br /&#62;
1/2 t. nutmeg&#60;br /&#62;
3/4 c. almond meal&#60;br /&#62;
1/4 c. ground flax seed&#60;br /&#62;
You can also add fruit (blueberries are really good) or raisins if you want.&#60;/p&#62;
&#60;p&#62;In a 4-cup measuring cup (you can use a small bowl instead), melt 2 T. of butter, then whisk together:&#60;br /&#62;
2 cups milk or non-dairy milk&#60;br /&#62;
2 eggs&#60;br /&#62;
1 t. vanilla&#60;/p&#62;
&#60;p&#62;Slowly pour milk mixture over oatmeal mixture, using a fork or your whisk to move oatmeal around to make sure the liquid is settled throughout the pan.&#60;/p&#62;
&#60;p&#62;Bake at 375 for 30-35 minutes.  Cool and then cut into 1&#34; squares for toddler nibbling.  Store in the refrigerator or freeze.  Reheat cut squares for 15 seconds in the microwave.
