My son (2.5) has been loving multigrain or seed crackers, cheese and turkey pepperoni. He doesn't necessarily eat it all stacked together but he's starting to realize he can do that. I swerve it with a fruit and maybe some slivered almonds or peanuts.

Ravioli or tortellini with butter.

We do lots of soups - Annie's, Earths Best and Campbells. He likes shapes (stars, bunnies, etc)

Earths Best also makes their version of spaghetti-o's. I'm sure it's not drastically better but he loves it with some Parmesan cheese mixed in. Served with veggies and fruit on side.

He also loves chick peas. Hates hummus - loves chickpeas. So sometimes I'll do those with cubes cheese, olives and cucumber and tomatoes and crackers. Like a Greek bento.

We send my son with dinner leftovers almost every day, (actually we all do) and always eats it. I do a lot of one pot dishes or soup, so I send it hot in a thermos and it's how when he eats it. I just make a bit extra every night for dinner, then pack everyone's lunches the night before, then heat it up in the am. For me this was a game changer.

Other days we do quaidillas, or sandwich squares.

I also send fruit and cheese as a snack every day. It's so hard to not fall into a rut with lunches - and I am only one school year in!

One thing my son has been eating really well are these savory rice pancakes. It's just 1 cup of cooked rice mixed with 2 eggs and 1/2 cup of cheese, salt and pepper, and a mix of minced whatever cooked veggies and meat you have around. Then you just pan fry them in small spoonfuls until they are golden on each side. I make a batch and it's enough for a few lunches or a fast dinner. It uses up leftovers and it has all his food groups in one bite. I nuke it in the morning from the fridge or freezer and just send it to school with fresh fruit, a ketchup packet, and some carrot sticks or cucumber slices. They taste fine cold/room temp as long as they were heated at some point (otherwise the rice is hard).

I make quick pizzas out of flatbreads.

Fried rice or pasta in the thermos.
