Also these muffins are great: http://laurassweetspot.com/2013/07/16/popeye-muffins/

My DH likes them, LO begs for them all the time. I think they are okay but they are like a whole serving of veggies in them so works for me!

And fwiw, we aren't "sneaking" them in. LO helps me make them! So that helps the guilt a bit.

we're still working on the veggies but she'll do them small dice sometimes. her favorite things are turkey dogs, mac and cheese, and your typical processed meats like sausages and bacon. She likes ground meat of all kinds and if i make them into a patty. She'll also eat slices of grilled chicken, but ground beef seems to be her favorite. I think? It changes every week. I don't mind throwing a "toddler meal" at her a couple times a week, but I try to limit it because I don't want to become hostage to them ;) Noodles of all kinds, too! With all sorts of flavorings on top.

My little one just loves chicken and most meats, doesn't touch veggies much, except if the blend cooked spinach into sauces. I can also put it in Italian Wedding coupe with carrots, which he loves.

We also have a juicer where I add carrots and celery to apples and pears and he will drink it up.

The only veggie form he will devour is kale chips! He would probably eat a whole head of kale that way. Who doesn't like seasoned chips!? We add Montreal steak spice and olive oil to it baked in oven.

Weelicious (website and cookbooks) have a lot of great toddler friendly recipes that give you different ways to give kids veggies. My kids love the black bean cakes, spinach ricotta bites, "fried" green beans, potato pea cakes, turkey meatloaf bites, to name a few. When I make something from Weelicious, I usually double the recipe and freeze the extra (so I know I always have a kid friendly veggie side dish on hand).

D will eat pretty much anything if it's in the form of a soft taco or a quesadilla. So I sneak veggies in that way - we eat tacos once a week, probably. If I plan to make pasta that week, I buy the pasta made with veggies (I think it's Barilla, though Target brands also have some veggie versions, too).

If I mix spinach or kale in his scrambled eggs he eats them. We also do green smoothies which he LOVES. And he likes to dip things a LOT so we do broccoli with ketchup etc., and sometimes can get him to eat green beans with ketchup. But he will always eat corn, carrots, broccoli, peas and pouches with veggies.

We have the opposite issue and he won't eat much of the protein. He is anti-meat lately!

I always sneak veggies into the quesadilla! She loves black bean and cheese quesadillas and I like to add some spinach in there and she's none the wiser! Otheriwse, I consistently offer her what we are eating at dinner time but she usually only eats the protien and gets a small serving of yogurt befoRe bed. I assume that if shes hungry enough, she will eat what I give her. Breakfast and lunch always contain the few fruits and veggies that I know for a fact she will eat, as does her snack so I don't really worry too much if she won't eat it at dinner.
