it's not a sandwich but do you think she'd like quesadillas? my lo loves them. we just use whole wheat tortillas, cheddar cheese and random veggies like broccoli, mushrooms, green peppers. but any veggie would work.

@MungBean: Can your LO eat peanut butter? I put PB any practically all of my son's sandwiches as kind of like a "glue". I'll make him a fried egg sandwich and put PB on the 2 slices of bread so that the egg doesn't slide out. I don't know about you but I can put PB on anything. haha

nut or seed butter and bananas (yummy).
Pepperoni (my son loves pepperoni).
nut or seed butter and honey.
Egg salad or chicken salad
Hummus and avocado
You could do a pizza sandwich toasted and put lots of veggies blended into the sauce.

@MungBean: We also do PB sandwiches at home but we use sunflower butter at daycare since peanut products aren't allowed. I like the sunflower butter...yum!

A suggestion on fillings falling out, have you tried those little mini pitas made by Joseph's (and probably other pita companies). They serve those at LO's daycare, they are whole wheat and a great size for small hands and the pita design keeps fillings in!

What about chicken salad? You can mince up celery and green pepper (even red pepper and carrots), or add in sliced grapes and apples.

Lately one of the few things my very picky 16 month old will eat are sandwiches. I've given her grilled cheese, egg and cheese, and just jam. Trying to come up with more sandwich ideas- I'm thinking of trying tuna salad today. Any other easy sandwich ideas? Bonus if you can sneak in veggies ;) and extra bonus if its something easy to hold and eat, without filling that will fall out.
