If you keep the cabinets, I wouldn't leave it asymmetrical and having a cabinet that didn't open all the way would drive me nuts (I have one in my kitchen and when we renovate it has to GO). That way the shelves can go clear to the wall on either side. My husband and I disagree about what to do here.
