I make mashed sweet potatoes. Just do pure maple syrup and cinnamon to taste. Or you could do brown sugar which is delicious. Heats up well and freezes well.

This is yummy: http://www.foreverafterblog.com/2013/09/avocado-white-bean-salad-with.html?m=1

I also love a kale, cranberry and toasted almond salad. Nothing on it but a little olive oil and salt & pepper.

Good bread, a salad with nuts and dried fruit, roasted butternut squash cubes, roasted broccoli (tossed in olive oil, lemon juice, chili flakes and garlic), roasted cauliflower tossed in olive oil and cumin.

I make a pasta salad that's just olives, capers, sundried tomatoes, basil, and parsley. I also add parboiled broccoli sometimes.

Also never underestimate how great pre-cut seasonal fruit can be. Kiwis, Cara-Cara oranges, apples and grapefruits could make a wonderful fruit salad or fruit plate. Someone brought us a fruit salad pp and I absolutely devoured it!

I also love a good soup: butternut squash, or a winter veg soup is wonderful. I recently made my lacto-ovo neighbor a vegan soup: kabocha squash, Savoy cabbage, parsnips, carrots, and some crusty bread.

I'm making a black bean dish for the main, but I need a side that is 1. easy and 2. warms up well. I was thinking roasted sweet potatoes, but I'm not sure how well they will reheat. Maybe a pasta salad if anyone has a vegan recipe that actually good? Or other ideas? Help :)
