Oatmeal and peanut butter&#60;br /&#62;
Smoothie with almond milk, fruit and vegan protein powder&#60;br /&#62;
Avocado toast with tomato&#60;br /&#62;
Cereal with almond milk&#60;br /&#62;
For weekends/fancier breakfasts I might have scrambled tofu or pancakes&#60;/p&#62;
&#60;p&#62;Lunch/Dinner - Lunch is usually leftovers from dinner. So typically I eat beans+veggie+grains. If you are going whole plant based you want to avoid oil since it is technically not a 'whole food.' A good cookbook to check out is Happy Herbivore.

<description>&#60;p&#62;I am not a vegan, but went through a vegetarian/vegan season in my life.  I pretty much ate a &#34;normal&#34; menu but with vegan replacements for things.&#60;/p&#62;
&#60;p&#62;In the summer, I usually drank green juice (kale, romaine, lemon, apple, cucumber, ginger) in the car on the way to work.  Then an hour or two later, I had cereal with almond milk.  Coffee with soy or coconut creamer.  &#60;/p&#62;
&#60;p&#62;Lunch was usually a heavy salad with avocado, baked tofu, hummus, and/or nuts or with leftovers from the night before piled on top.  Sometimes I ate a sandwich with grilled veggies and hummus.  Usually had that with a side of fruit and a square of dark chocolate.&#60;/p&#62;
&#60;p&#62;Dinners were things like stirfry (tofu, cashews, or fake meat), or lots of bean-based dishes, like black bean enchiladas with vegan cheese (try Daiya), sloppy joes made with lentils instead of meat, or burgers using baked tofu or homemade bean burgers.  On the side, I'd eat things like kale chips, butternut squash or sweet potato fries.  &#60;/p&#62;

I have to say, veganism can be as ”junky” as any other diet, and it helps if you don't set up too many restrictions for yourself, but take things slowly and eat things that sound good to you.&#60;/p&#62;
&#60;p&#62;Secondly, find a beautiful blog or cookbook to inspire you (try Have Cake Will Travel, Seitan is My Motor, or any cookbooks by Terry Romero or Isa Chandra Moskowitz), and don't forget to think of international cuisine for inspiration!&#60;/p&#62;

<description>&#60;p&#62;Just chiming in to say if you like hummus, it's so easy to make! I just put a can of garbanzo beans, 3-4 tablespoons each of lemon juice and olive oil and a good amount of garlic salt (can use garlic powder or fresh garlic if watching salt intake) into the food processor. A lot of recipes use tahini but I think it tastes amazing without. Great for snacks with fresh veggies.

&#60;p&#62;Complete proteins:&#60;/p&#62;
&#60;p&#62;Quinoa (this is a seed technically)&#60;br /&#62;
Hemp (I make my own hemp milk from hemp hearts and also put hemp protein in my smoothies)&#60;br /&#62;
Soy&#60;br /&#62;
(But it is really about combining a variety of these and many other plant proteins!)&#60;/p&#62;
&#60;p&#62;Really delicious things:&#60;/p&#62;
&#60;p&#62;Spinach (great protein as well!)&#60;br /&#62;
Sweet potatoes (skin has protein!)&#60;br /&#62;
Whole corn tortilla chips (protein and fiber!)&#60;br /&#62;
Avocado (vegan superfood!)&#60;br /&#62;
Almond butter&#60;br /&#62;
Walnut butter (anything can be made into a butter!)&#60;br /&#62;
Hummus (especially if you can make it or get it fresh made locally)&#60;br /&#62;
Tempeh (marinated = omg!)  Awesome for wraps (red wine vinegar, tamari, paprika, pepper... I think that's it...cook to near boiling pour over sliced tempeh let soak at least an hour best overnight then bake half hour 350 or until dark brown)  so good in a wrap!!!!!!!!!&#60;br /&#62;
Okay, I totally just went to town here :)  I am super supportive of veg eating so I hope I can offer encouragement!&#60;/p&#62;
&#60;p&#62;Some more good things:&#60;/p&#62;
&#60;p&#62;Spirulina&#60;br /&#62;
Lentils&#60;br /&#62;
Beans&#60;br /&#62;
Split peas!&#60;/p&#62;

Zucchini &#34;pasta&#34; in a fresh pesto or rustic marinara&#60;br /&#62;
Soups, stews, or chowder&#60;br /&#62;
