&#60;p&#62;I actually make it even lazier by omitting the eggplant because I don't care for it. So it's just peppers tomatoes (occasionally I'll slow-roast some for extra flavor), summer squash, garlic and onions. And I don't peel the peppers. So I make super lazy ratatouille.  :happy: &#60;/p&#62;
&#60;p&#62;I like to bring this in an aluminum tray over quinoa, because it's just as good hot as it is room temp and it freezes well.

&#60;p&#62;I haven't made this particular one, but one similar that I bake (biggest difference is that I mash roasted sweet potato and black beans). I make big batches of them and freeze them. They reheat well in the microwave. When I make them fresh I bake them.

<description>&#60;p&#62;A lady my DH works with has advanced stage cancer and they are organizing meals for her. I'd like to contribute 2-3, and plan on sending muffins too. &#60;/p&#62;
&#60;p&#62;She prefers vegetarian meals (no red meat, chicken is ok). Please send me your ideas. DH will take the meal to work in the AM and it will be delivered to be family, so must heat/reheat well in that respect.&#60;/p&#62;
