&#60;p&#62;I make the following modifications the (a) make it even tastier, and (b) make it vegetarian:&#60;br /&#62;
Modifications I made regardless of whether I'm using chicken or veggies:&#60;/p&#62;
&#60;p&#62;-add 1 tsp. ground coriander and 1/2 tsp. garam masala at the same time that curry powder is added&#60;br /&#62;
-double cayenne pepper&#60;/p&#62;
&#60;p&#62;Modifications for vegetarian curry:&#60;/p&#62;
&#60;p&#62;-instead of adding chicken, add sliced red and green bell peppers, one can (15 oz.) of chick peas, some cauliflower and one large cubed sweet potato.&#60;br /&#62;
-up the tomatoes to 1 28 oz. can&#60;br /&#62;
-add some vegetable broth to ensure liquid covers veggies, then just cover with lid and simmer until veggies are cooked through.&#60;br /&#62;
-this makes quite a bit and is great to make on a Sunday and keep as leftovers for lunches/dinner for the week

One of the things I ordered was a vegetarian curry that has raisins, chickpeas, a sweeter curry sauce, etc. It was amazing and had limited ingredients so I'm wondering how hard it would be to make it myself. I have no idea where to start looking for a recipe so I thought I'd ask all of you.&#60;/p&#62;
