I make veggie noodles (I bought the Vegettini) and she will eat zucchini, sweat potatoes, ect. and she doesn't even realize it's not pasta. I will also use spaghetti squash as noodles and she doesn't seem to notice (as long as it's covered in sauce.)

I also used to call green beans and snap peas "green French fries" and she would gobble them up, at 2 that doesn't work anymore ;) But it did for awhile.

I agree with @greentea about roasting veggies. Makes them sweeter, which might appeal to your LO. I also had/have better luck with fresh veggies over frozen veggies too.

At that age LO loved almost anything sautéed in some butter, with a little shake of parmesan cheese on top. Of course, what’s not to like about that method?! :silly:

Another thought - do you experiment at all with spices/seasoning? LO is a much better eater of things that are well-seasoned with different spices.

@Anagram: Good idea about the meat and veggie options only. I guess the key is consistency! And the dogs will eat healthy if he tosses them :silly:

@mrs.shinerbock: @QBbride: That's how I disguise them now, but haven't tried in the quesadilla or on pizza. Thanks for the new ideas!

@Greentea: He will take them in a smoothie or puree, no problem. I haven't tried roasting them. Do you have any favorites or recipes you roast?

Have you tried roasting them? Or maybe some cheese on top? Or sometimes out of a soup? I would just keep trying. How about in a smoothie?

I've had luck with cutting them up very small or mashing them and putting them in a quesadilla. My 14 month old will eat almost anything in a quesadilla or grilled cheese.

I think for my LO, it's just repeated exposure. She never likes anything the first 5-6 times I serve it. But the carbs she can eat are very limited (because she's MSPI and I work full time and don't have time to make breads and stuff from scratch much), so every lunch and dinner she just gets a meat + 2 veggies and eventually she started liking most of them.

My 12 month is a carb monster. He will eat a few green beans if I disguise them, and peas too. That's it. Everything else gets spit out or thrown on the floor.

He will, however, suck down veggie pouches like a pro, so it's not a taste issue, but I'm thinking a texture issue? How do you get your LO to eat veggies?
