<description>&#60;p&#62;@regberadaisy:  yup fry shaped, tossed in olive oil, and roasted at 400 until browned on the edges.  They crisp more after you let them cool a bit but they are a bit Softer than regular fries.&#60;/p&#62;
&#60;p&#62;@Alba4:  I use this recipe but steam/squeeze out the water out of my veggies first, and add a wee bit more flour and some parm cheese to get them to be a bit sturdier.&#60;/p&#62;

<description>&#60;p&#62;@gingerbebe:  yup - we do roasted broccoli and cauliflower a lot. It's kinda became our standby. Looking to shake things up! We like to keep trying new things with them. We sometimes luck out and find new things they love. And I feel it's important to keep trying new foods. Roasted butternut squash fries sound yummy! Do you just cut them in fry shape and roast them?&#60;/p&#62;

<description>&#60;p&#62;Sounds like you are doing great.  My son is 18 months and really not into veggies at the moment (outside daycare, who can get him to eat everything on earth).  I do make some veggie pancakes (I use Mark Bittman's recipe and sometimes add cheese) using frozen veggies available year-round.  I just steam them in the microwave, squeeze out the excess water really hard, give everything a good chop, and then proceed with the recipe.  One batch had frozen corn, frozen spinach, shredded carrots, and peas.  I make them in batches, cool, and freeze.  They toast up nicely in the toaster oven when its time to reheat and my son will eat them dipped in ketchup.&#60;/p&#62;
&#60;p&#62;Another thing I personally love is roasted butternut squash fries or roasted florets of broccoli or cauliflower - they get crispy at the edges and taste GOOD dipped in ketchup.  I would imagine kiddos would eat the crispy broccoli.  I also do roasted halved brussel sprouts tossed in olive oil and salt and pepper until they are brown on the edges, then sprinkle Parmesan cheese on top and then roast some more until the cheese browns.  Its crispy and delicious!

<description>&#60;p&#62;@regberadaisy: I used to follow a strict plan and they considered sweet potatoes a veggies, so I do count that as a veggie, but not white potatoes. &#60;/p&#62;
&#60;p&#62;We do zucchini, yellow squash, sweet potatoes, bell peppers, corn (although I count this as a starch), green beans, edamame, carrots, spaghetti squash, tomatoes, spinach (hidden usually), and lettuce.

I made him eat peas a few months ago and he promptly threw up after eating them, so I don't force food anymore. So you're doing way better than us! &#60;/p&#62;
&#60;p&#62;But I just found, in general, that it takes a lot of commitment to put vegetables on the table in the winter time. I have made an effort to have one vegetable on the dinner plate, but it's seriously hard.

I group them into the starch group. LOL But yes, they love potatoes but the younger suddenly won't touch sweet potatoes any more!

&#60;p&#62;The girls won't eat leafy greens as a side so it gets hidden. Brussel sprouts and asparagus are out too.&#60;/p&#62;
