@heartonastring: we do green smoothies!

We do green smoothies in the lollacup so she can do it herself. I do hemp milk, kale, blueberries, greek yogurt and banana and avocado.

I did the omelette idea too -- I would either stack the spinach/kale leaves and then cut them as tiny as I could, or I would sauté them first and then chop. mix with a raw egg, then scramble.

sometimes I could make it a 70/30 ratio of veggies to egg! haha...

at almost 2 years old he doesn't like this anymore, though :P

eta: I second the quiche idea! yum.

We do a lot of green smoothies using kake or spinach. Also, zucchini, broccoli or green beans sautéed with garlic and lemon. LO also loves cucumber or bell pepper with hummus.

Our 12 month old has been getting picky about veggies lately but he will always eat ravioli so I buy ravioli that has spinach in it and that works. Mine won't eat eggs so that is out for us.
I may try quesadillas. That sounds like a good plan @Silva! Thanks!

Try wilting down spinach or kale and adding a little sprinkle of nutmeg

We sautéed almost everything (cut into chunks or "fingers") - all manner of squash, sweet peppers, mushrooms, sweet onion, eggplant, fennel, etc. LO loved a little shake of Parmesan cheese on top of her veggies.

I steam spinach/greens for a couple minutes and then sauté with garlic.

Green smoothies are great.

I roast broccoli and zucchini in the oven and then chop them into small piece and she loves them.

I've also put kale in soups and stews and she'll eat it that way too.

For the most part though she just eats whatever we eat, so she eats the same veggies we do, just cut into smaller pieces.

Back when LO liked leafy greens (not anymore) i either steamed them or sauteed them in olive oil, garlic and salt. Then chopped them up to avoid choking hazards. I also put them in omelettes, or pureed them and used it as part of a sauce with her pasta.

I chop spinach and put it in quesadillas, give her smoothies with greens in them, and make pesto/sauces out of broccoli and peas and toss them with pasta. Also, quiche with any chopped green or broccoli works,

Hi Bees,
LO is 13 months and loves feeding herself. I feel like I'm in a rut with what veggies to give her. Or how to prepare them. She loves sweet potato, squash, cucumber, avocado, carrots...basically things that are easy to pick up because I can cut them up chunky and steam. But how do I get her to eat leafy greens like spinach and kale? I tried giving her some baby spinach (washed and raw) and she looked at me like I was crazy.....

She's not a fan of being fed by me...she wants to do it herself..

I would love to hear your veggie suggestions and preparation ideas.
